The Morin family had owned their own domaine in Nuits St. Georges, Burgundy, for generations when Claude Morin founded a wine trading company in 1822. Morin Pere et Fils is one of the oldest négociants in Burgundy. In 1934, Morin founded the wine brotherhood Confrérie des Chevaliers du Tastevin together with Georges Faiveley and Camille Rodier. Charles de Gaulle was a lover of Morin wines and had them served on official occasions in the Elysée Palace.

The Savigny appellation is located in the northern part of the Côte d'Or. The village, just under four kilometers from Beaune, has 20 sites classified as Premier Cru. A characteristic landmark of Savigny is the 14th century castle with four picturesque round towers. On an engraving from 1703, the wines from Savigny are said to be "nourishing, theological and disease-banishing".

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

The classical dry red wine comes from the appellation Graves, Pessac Leognan in Médoc. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. Graves is situated on the left bank of the Garonne river, in the upstream part of the region, southeast of the city Bordeaux. The name Graves derives from ist intensely gravelly soil. The soil is the result of glaciers from the Ice Age, which also left white quartz deposits that can still be found in the soil of some of the top winemaking estates. Typical for the left bank wines (Médoc) is the blend of grapes with Cabernet Sauvignon as the predominant grape. The others are Merlot, Cabernet Franc, Petit Verdot and Malbec.

The Pommard appellation, named after the municipality of the same name, with 313 hectares of vineyards is located in the Côte de Beaune part of the Burgundian Côte d'Or. It connects to the municipality of Volnay. The Cistercians owned vineyards here as early as the 12th century. The clergyman Claude Arnoux (1695-1770) described this wine in his famous book. Almost exclusively red wines are made from Pinot Noir with portions of Pinot Gris and Pinot Liébault. There are around 30 Premiers Crus with 128 hectares of vineyards.

The Côte d'Or has one part in the south with the Côte de Beaune and one in the north with the Côte de Nuits. It runs along the fault of the limestone hills of Burgundy and the trench of the Saône. The limestone of this region comes from the Middle Jurassic and the Upper Jurassic. The vineyards are located on the south-east facing slopes between 150 and 400 metres above sea level. A layer of marl lies above a subsoil of Jurassic limestone. Erosion is a decisive element for the quality of the individual plots (climats). The best sites are found in the upper part of the vineyards on the edge of the limestone.
The town of Nuits-Saint-Georges is the second most important wine town in Burgundy after Beaune. Similar to the Hospices de Beaune, there is also an annual auction for charity in March called Hospices de Nuits. The administrative headquarters of the famous wine fraternity Confrérie des Chevaliers du Tastevin is also located here.

Port

Kopke is one of the most important port wine houses. The 1957 port matured in wooden barrels and was bottled in 1996 - as is usual with trustworthy producers, this information is also on the label.

Port wine is a sweet wine that comes exclusively from the Douro Valley. The name comes from the port city of Porto, from which the port has been shipped mainly to England since the end of the 17th century.
In the 17th century, the idea of ​​stopping wine fermentation by adding 80% wine distillate was developed. As a result, the sugar was not fermented any further and the wine retained its sweetness. This so-called fortification means that port wine has an alcohol content of between 19 and 22 percent by volume and lasts longer.
After a good two years of storage in a large barrel under airtight conditions, the Tawny Port is transferred to a small wooden barrel, the Pipa, with a capacity of 550 liters. Here it breathes (oxidizes) more and changes its color to tawny. Contact with the wood also changes the taste towards aromas of nuts, dried fruits etc. Standard Tawnys are filtered and bottled after 6-7 years.
Port wine is usually available as a non-vintage fortified wine. Only exceptionally good vintages such as 1957 are declared as a port wine vintage and allow the production of a tawny port or even a vintage port, i.e. a vintage port wine.
