Description of the product
Cava is a quality sparkling wine from the Spanish wine-growing region of Penedès. Like all high-quality sparkling wines, it is produced by bottle fermentation like champagne. In Spanish, "cava" means cellar, obviously because the months of ageing take place in underground cellars. Only certain recognised white grape varieties are permitted for bottle fermentation. The usual varieties are Xarel-lo, Macabeo and Paellada, each of which characterises the aroma of the sparkling wine: Macabeo gives the cava a mild apple flavour, while Paellada gives it its characteristic golden yellow colour. Xarel-lo contributes body and alcohol content. The cava is left to ferment on the lees for at least nine months and may only be marketed one year after the grape harvest at the earliest. Brut Nature is produced with less than 3 g/litre. Despite its low sweetness, it is considered aromatic and floral.
