2014 Morey Saint Denis Domaine Manuel Olivier Cote de Nuits Bourgogne

Grape variety : Pinot noir
Age of the vine : 40 years.
Yields and density: 45 hl / ha with 10 000 plants / ha.
Terroir : located at the places called « les Cognées », « les Crais Gillon » and « les Champs de la Vigne » at the bottom of the hill . The vines are facing Eeast at a height of 250 metres. Chalky-clayey soils containing a few marls with 30 cm in depth composed of ochre clay and draining stones.
Way of culture : ploughing, earthing up every 3 years. Harvested by hand, use of a table to select the grapes. Integrated pest control, organic fertilizer.
Vatting process : the grapes are totally de-stemmed in order to extract only the smooth tannins of the skins. Maceration at a low temperature during one week, natural yeast, the wine is kept in vats from 5 to 6 weeks at 30°C. Treading and pumping over made according to the result of the daily tastings.
Maturing : the wine has remained 18 months in contact with fine lees in oak casks (10% of new barrels, 30% of1-year-old barrels, 60% of over-3-year-old barrels). Barrels benefit from a 36-months drying process, the oak comes from the Allier and the Vosges forests. Light, slow and long toasting process in wood depth.
Wine tasting : fruity, fine and sharp nose. The entry is fresh, the palate is well-balanced and fleshy with red stone fruits. It ends in a subtle way.
Service : cellar it from 15 to 20 years. Serve it between 16 and 18°C .
