2014 Pommard 1er Cru Les Arvelets Manuel Olivier Côte de Beaune Bourgogne

Grape variety : Pinot noir
Age of the vine : 35 years.
Yields and density: 40 hl / ha with 10 000 plants / ha.
Terroir : located in the middle of the hill at a place called « Les Arvelets » at a height of 270 metres. Brown chalky-clayey soils
with a deepth of 40 cm on limestone and gravels.
Way of culture : ploughing, earthing up every 3 years. Integrated pest control, organic fertilizer.
Harvest : hand picking in plastic boxes, use of a table to select the grapes.
Vatting process : 50% of the grapes are not de-stemmed, this part is put down in the vat, the other 50% come on top of it.
Maceration at a low temperature during one week, natural yeast, the wine is kept in vats from 5 to 6 weeks at 30°C. Treading
and pumping over made according to the result of the daily tastings.
Maturing : the wine has remained 18 months in contact with fine lees in oak casks (50% new barrels, 50% barrels from 1year).
Barrels that benefit from a 36-months drying process, the oak is coming from the Allier and the Vosges wood. Light, slow and
long toasting process in wood depth.
Wine tasting : nose of macerated black fruits that develops a fur bouquet while ageing. The palate is powerful with strong
tannins, sustained by an exceptionnal lenght in mouth.
Service : cellar it from 5 to 15 years. Serve it between 16 and 18°C.
