Viticulture in the Layon region was developed by Dutch traders in the 16th century. The wine is made from 100 % Chenin Blanc grapes. The temperate oceanic and particularly dry climate, combined with the shallow and pebbly soils that warm up quickly, provide ideal conditions for the development of noble rot. The slopes are well ventilated and allow for the harvesting of overripe grapes with a very high sugar content. The berries have to be harvested manually in several rounds. The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. Arnaud III de Pontac, a leading nobleman and the first president of the regional parliament- who insisted that the red wine from his family's estate, located in Pessac, was an unique, that didn't had sold  to négociants, who then blended it with other wines. Starting in 1660, he demanded a premium price for a wine with a name that no one beyond Bordeaux knew- "Haut- Brion", his family estate. After all, he sent his son to London five years later to open a tavern, where his wines were sold so exclusively and at quite steep prices. The vineyard of Château Haut Brion is planted to 40% Cabernet Sauvignon, 37% Merlot and 18% Cabernet Franc. The high Merlot content, compared to the Médoc First Growths, gives the wine a voluptuous edge, but does not in any way detract from its ability to age. Haut Brion was purchased by the American financier and politician Clarence Dougless Dillion in 1935. His granddaughter still owns and operates Haut-Brion to this day.
