The classical dry white wine comes from the appellation Graves. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. Graves is situated on the left bank of the Garonne river, in the upstream part of the region, southeast of the city Bordeaux. The name Graves derives from ist intensely gravelly soil. The soil is the result of glaciers from the Ice Age, which also left white quartz deposits that can still be found in the soil of some of the top winemaking estates.

A direct, precise red wine from Bodegas Aradón. The winery was founded in 1864 and is now one of the most important in the region. The cuvée of Granacha, Graciano and Tempranillo was aged in French oak barriques for 12 months.

The northern Spanish wine-growing region of La Rioja stretches along the River Ebro. The vineyards are grown on calcareous and clayey soils. The red wines from Rioja are traditionally always a cuvée, i.e. a blend of different grape varieties. The most important is Tempranillo, followed by Garnacha Tinta (fr. Grenache Noir), Mazuelo (fr. Carignan) and Graciano.

Quinta do Paral is located near Vidigueira in the heart of Portugal and is spread out over 100 hectares of land.  Its potential lies in the fertile clay, granite and slate soils as well as a unique microclimate create optimal conditions for a unique terroir. The excellent quality of the grape varieties allows to produce high quality wines that express the distinctive character of the Alentejo. With the acquisition of Quinta do Paral by entrepreneur Dieter Morszeck, the winery was realigned in collaboration with chief enologist Luís Morgado Leão and the autochthonous varieties of 40 year old vines experienced a renaissance. Today, the winery focuses on sustainability and craftsmanship combined with great respect for the Alentejo culture. Manual picking, natural grape care and strict yield reduction ensure the high quality of the wines.

The Valenti winery is relatively young. It was only founded in 2004 and newly planted on almost 30 hectares. The soils are among the best on Mount Etna and in Sicily in general - Passopisciaro in the municipality of Castiglione di Sizilia. Etna Rosso is a DOC for dry red wines in the Italian region (island) Sicily. Sicily is considered the cradle of Italian viticulture in general. Many of today's autochthonous grapes descend from the ancient grape varieties cultivated at the time. Sicilian wines are mainly based on two of these traditional grape varieties: Nerello Mascalese at Etna Rosso and Nero d'Avola. The Etna wines are reminiscent of Pinot Noir or even more of German Pinot Noir - mineral, with fresh cherry fruit and careful aging in wood.
In the "Storia die Vini d'Italia" (History of the Wines of Italy), published in 1596, wines from here are mentioned and their exceptional quality attributed to the fly ash blown in from Mount Etna.
The grape varieties used are 80% Nerello Mascalese and 20% Nerello Cappuccio.

Silvaner is an old variety that once was the most important grape in Germany. It likes average exposure to sunshine and needs moist soil. Silvaner is generally best enjoyed while it is young. Especially, it is found in Franken, Rheinhessen and Saale-Unstrut. Weingut Höfling is a family-owned winery in Eußenheim situated to the Northwest of Würzburg. Almost all of their vineyards are present on slopes and hilly terrain, and most of all of the work in the vineyards is by hands.  The people in the winery work very hard and with a commitment to produce unique Franconian wines that show the qualities of the region. So they uses domestic wood and hometown barrels and like the most prized Franken wines were traditionally bottled in a Bocksbeutel, a squat green or brown flagon with a round body, is by Höfling too.

Pinot-Noir. Später-Veit is one of Piesport’s oldest winegrowing families. The vineyard has 7 hectares in and around the famous village of Piesport in the Mosel. 

Dolcetto ist ein wunderbares Mysterium. Der Name verweist auf Süßigkeiten und deshalb hat es der trockene Rotwein außerhalb des Piedmont, wo ihn die Leute kennen und trinken, schwer. Ich hatte schon vor Jahren gehört, dass Dolcetto einmal teurer war als Barolo. Erst jetzt beginne ich zu verstehen, warum das überhaupt sein konnte. Er ist ähnlich filigran wie gute Nebbiolo, dabei aber frischer und fruchtiger. Er ist zudem selten - beim Keltern sehr anfällig für Brettanomyces und so bei vielen Winzern vermieden.

Individuality is our favorite quality in wine: each year, the same grapes can give very different wines according to the climate, and then the winemaker will also slightly alter the taste of that specific wine, choosing to let the bunch of grapes ripening in the sun one more day or choosing the fermentation technique he prefers, the oak barrel or the stainless steel barrel. Either way, passion is the essential ingredient to make a fine and original wine. That is exactly what Erwin Poller has got: passion and commitment to his authenitic project. He is a master at producing excellent wines and a mindful narrator of the stories behind each bottle of wine. The peculiar labels of his bottles cleverly serve this purpose: telling a unique story of enthusiasm and originality.

A feather! Dozens of chickens scratch and peck among the Valtellina vineyards. They freeliy come from the nearby henhouse and Erwin Poller figured out that they can represent a blessing for the calcareous soil: when the chickens stroll through the vineyard they loosen and turn the soil and help areate it. And since no thing should be wasted, Poller collects the chicken feathers off the ground and uses them to decorate his bottles.

Elegant red wine from the Portuguese Douro Valley. The grape varieties of the wine are Touriga Franca (75%) and Touriga Nacional (25%), exclusively the classic autochthonous grape varieties of Portugal. The wine is vinified in Tonneau.

The name of the wine - Papo Seco - refers to a legendary and infamous family ancestor. The man had emigrated to South America and had to flee back to Portugal because of some unclear criminal activity.

La Fleur de Château Haut-Piquat is a 100% Merlot from 4 hectares of the best parcel in Lussac.

The Château Haut-Piquat is located in the Lussac Saint-Emilion growing area and was the first winery in 1972 taken over by the Rivière family. From the elegant wine cellar, the view over the surrounding hills is remarkable: hectares of vines and forest, especially on the hill of Picampeau, where there is also an impressive megalith. Today, the winery has 22 hectares of continuous vineyards on an excellent lime soil, as well as hills with various sand-pitted red clay formations. Sustainable cultivation has been practiced since 2001.

A rare Arneis Reserve! The wine shows the full potential of the white grape variety with a longer maturation period and longer shelf life. Contrary to what one might expect, the Riserva is also exclusively in the stainless steel tank and the bottle. Arneis is the typical white wine of Piedmont. The grape variety of the same name was already known in the 15th century. It is relatively low in acidity, produces fragrant wines to be drunk young, with fine fruit and at the same time a strong body. Due to its susceptibility to downy mildew, Arneis almost became extinct a few years ago. It has experienced a renaissance since the 1990s.
The DOCG Roero Arneis was finally created in 2005.
The sandy hills of the Roero wine-growing region in Piedmont, across from the Barolo heartland, lend themselves particularly well to Arneis.

Pierangelo Careglio's winery is an ambitious family business that was founded in 1986 on very old vineyards with 9 hectares of vineyards. Typical for Roero is the sandy soil with clay and limestone parts. The wines from here are more aromatic and robust than their relatives from the Barolo region.

The Weinlaubenhof Kracher from the Austrian Burgenland is the epitome of noble sweet wines from Austria. His Beerenauslese cuvée consists of 60% Welschriesling and 40% Chardonnay and is aged to a small extent in barriques. White peaches and honeydew melon on the nose, stone fruit, tangerines, citrus fruit, ripe yellow peaches on the palate, elegant acid structure, very long, fresh finish.

Georgian wines are among the oldest in the world. The Kindzmarauli wine cooperative has also existed for centuries. The wine is an amphora wine, meaning it was aged in large ones for 6 months. buried ceramic amphorae and then 3 months in barriques made of Caucasian oak. Saperavi is the most important autochthonous grape variety from Georgia, Ukraine, Moldavia and Romania and produces spicy, medium-heavy wines with sophisticated wines. It is traditionally not only dry, but also semi-dry to sweet.

The wine producer Belliard is in the 15th generation! - i.e. since 1497 - family-run and today manages the most interesting vineyards in the classic Bordeaux appellations from a château befitting its status. So far, outside of France, the Belliard have mainly been active overseas. According to our tasting experiences, Belliard is particularly good at the left bank: first of all Margaux and Pessac Leognan, as well as Pauillac.

The Herrenberg Grosse Gewächs. The 19-hectare vineyard borders the Abtsberg and is benefiting from climate change. The wines are spicy, intense, with a certain creaminess. The Maximin Grünhaus vineyard has only Grand Cru sites. The vineyards of the old estate on the Ruwer are situated in a spectacular location: the Abtsberg, Herrenberg and Bruderberg vineyards extend in a row from the small Ruwer river and the south-facing von Schubert family manor house. The soil consists of bluish Devonian slate on a steep slope.

The classification of German wines is very different from that of Italy. The VDP (Verband Deutscher Prädikatsweingüter) is the Association of Quality German Winegrowers, and brings together the producers who can offer the highest results, very similar to the organisation of Burgundy territories. Furthermore, wines that are only made from grapes from certain plots of the best vineyards are called VDP Grosse Lage, similar to the 'Grand Cru' in Bourgogne. In this bottle of Riesling, the parcel is in Herrenberg. And finally within the Grosse Lage there are the Grosses Gewächs (GG), the dry wines in this category.

Pernand Vergelesses is typical Burgundy - and typically complicated. On the one hand, it refers to the village appellation in Burgundy's Côte de Beaune region. Added to the village name Pernand is the designation for the best vineyard "Les Vergelesses" with 18 hectares of vineyards. However, part of it also belongs to the neighbouring municipality of Savigny-lès-Beaune. In addition, the municipality of Pernand also has a share of 17 hectares in the famous Corton vineyard and thus has wines with the Corton Grand Cru designation. In the 1950s, the Clos des Menuts only covered one hectare of vineyards. Today it extends to over 25 hectares, not far from the historic town of Saint Emilion and located mainly in the western part of the municipality. This wine is a blend of 85% Merlot, 10% Cabernet Sauvignon and 5% Cabernet Franc. The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

Domaine de la Solitude is one of the most traditional wineries in the region. The oldest wine from La Solitude dates back to 1780 and the estate has been in the family since 400. The velvety smooth red wine is made from 50% Grenache, 25% Syrah, 15% Mouvedre and 10 Cinsault.

The history of this famous appellation in the southern section of the Rhône is closely linked to the popes. From 1309 to 1377, the city of Avignon was the seat of the popes and from 1378 to 1408 of two counter-popes. One of them was Pope John XXII (1244-1334), born in Cahors, who chose Châteauneuf Castle as his summer residence and gave important impulses to viticulture. The 3,140-hectare area was the first state-recognised appellation in France.

The Tre Pile family winery has been owned by the Ghisolfi family for four generations since 1852. Hermitage is one of the famous Grand Cru on the Côte du Rhône. The very elegant Syrah offers dark berry, spicy aromas with strong tannins and is very long-lasting.

The Hermitage Hill was formed in the Ice Age when the Rhône broke through this eastern extension of the Massif Central following a rapid fall in sea level. Despite its small size, the Hermitage is geologically very diverse. In the highest, western part, the soil consists of granite, which weathers into fine clay. The eastern, larger part of the slope, on the other hand, is formed in the middle by rubble made of sand and limestone that the Rhône had transported from the Alps. At the foot of the slope there are younger sediments from the Würme Ice Age. The highest points are again covered with loess. To protect the thin layers of soil from slipping, walls made of limestone were built. The name of the extremely long-lasting red wine Hermitage goes back to a hermitage founded in 1224 (Hermitage = hermit).

German most famous and oldest viticulture is the „Steilhange“, steep slopes along the Mosella river. No wonder that Weingut Milz can praise such a long winemaking tradition and history. Since 1520, the Milz family has been known as great winemakers in Trittenheim, a wine village in the well-known Moselschleife. Parts of the original 1680 wine cellar are today still visible. Milz’s wines are quite classic Riesling from the Mosel, since they present the ideal alcohol level, delicatesugar residue and an extremely long finish. In 1900, these wines used to be the most expensive in any European restaurant’s menu, even more high-priced than the best Burgundies and Bordeaux wines.

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

The classical dry red wine comes from the appellation Saint-Emilion in Bordeaux. Château La Gaffelière is owned by Léo de Malet Roquefort. Located in the centre of the St. Emilion appellation, due south of St. Emilion town, the Chateau La Gaffeliere shares a similar climate to that enjoyed by both St.Emilion and Pomerol: more continental than the maritime Médoc, with generally more spring rainfall, though less in summer and winter. La Gaffeliere's vineyards are planted with Cabernet Sauvignon 5%, Merlot 65% and Cabernet Franc 30%. The 22 hectare property lie on a sloped sandy/clay-limestone topsoil and limestone subsoil (a mix of Côtes and Pieds de Côtes).
