Yields and density: 45 hl / ha with 10 000 plants / ha.
Terroir : located on the commune of Flagey-Echézeaux at 100 metres of the Clos de Vougeot and the Grands Echézaux at a spot
called «les Maizières Basses» at the bottom of the hill on a gentle slope. The vines are facing east at a height of 250 metres. Chalkyclayey
soils with 50 cm in depth composed of red clay and draining stones.
Way of culture : ploughing, earthing up every 3 years. Harvested by hand, use of a table to select the grapes. Integrated pest control,
organic fertilizer.
Vatting process : 50% of the grapes are not de-stemmed, this part is put down in the vat, the other 50% come on top of it. Maceration
at a low temperature during one week, natural yeast, the wine is kept in vats from 5 to 6 weeks at 30°C. Treading and pumping over
made according to the result of the daily tastings.
Maturing : the wine has remained 18 months in contact with fine lees in oak casks (30% of new barrels, 30% of 1-year-old barrels,
30% of over-3-year-old barrels). Barrels benefit from a 36-month drying process, the oak comes from the Allier and the Vosges
forests. Light, slow and long toasting process in wood depth.
Wine tasting : intense, elegant and complex nose . The palate is rich with dense tannins and looks promising. Velvety texture while
ageing.
Food and wine matching : Wild fowl or game, either roasted or grilled, strong cheese.
