Description of the product
Les Grenouilles is an almost 10 hectare Grand Cru site in Chablis. The Chablis wine region is the northernmost wine region in the Burgundy region. The name was particularly well known in the 1970s and 1980s and was considered a synonym for a dry white wine at that time. Chablis is almost equidistant from Champagne, from Sancerre on the Loire and from the nearest Burgundy locations on the Côte d’Or. The cool wine-growing climate gives Chardonnay a pronounced acidity, which the winemaker usually leaves in favor of the fruitiness of the wine. The wines are therefore usually aged in stainless steel tanks and do not undergo malolactic fermentation. The steely acidity, which is largely determined by the comparatively high proportion of malic acid, is one of the trademarks of Chablis and gives the white wine a remarkable longevity.
The Morin family had owned their own domain in Nuits St. Georges, Burgundy for generations when Claude Morin founded a wine trading company in 1822. Morin Pere et Fils is one of the oldest négociants in Burgundy. In 1934, Morin founded the wine brotherhood Confrérie des Chevaliers du Tastevin together with Georges Faiveley and Camille Rodier. Charles de Gaulle was a lover of Morin wines and had them served at official occasions in the Elysée Palace.

Terroir : located at the place called « Les Pellands » at the bottom of a gently sloping hillside. The vines are facing east at a height of 250 metres. Marly soils with stones ( chalky marls).
Way of culture : horse ploughing, earthing up every 3 years. Integrated pest control, organic fertilizer.
Harvest : hand picking in plastic boxes, use of a table to select the grapes.
Fermentation : 100% in oak barrels including 30% new ones. Wine agitated every day, temperature control process at 18 and 19°C.
Maturing : aged in oak casks for 18 months , lees are stirred up every week. Barrels benefit from a 36- month-process of drying ; wood coming from the center of France (fine grained selection). Light, slow and long in wood deepth toasting process.
