Champagner und sparkling wines
Since 1919, the sparkling wine may only be called champagne if it is produced in Champagne. Everything else is called crémant in France, sparkling wine in Italy, cava in Spain and sparkling wine in Germany. The important thing is always: bottle fermentation! ...
First of all, every sparkling wine is a still wine. The second fermentation in the bottle produces carbonic acid. The longer this second phase of bottle fermentation lasts, in which the fine yeast plays an important role, the more complex and elegant the final sparkling wine becomes.
Only at the end of maturity does the disgorging take place. The crown cap is replaced by the cork and the yeast residues are removed from the bottle.

Louis Chavy's winery is part of the Compagnie des Vins d'Autrefois, i.e. the wines of yesteryear, the classic wines from Burgundy. The company includes many small but long-established wineries.
Louis Chavy comes from Puligny-Montrachet, one of the best white wine regions in Burgundy.

Cava is a quality sparkling wine from the Spanish wine-growing region of Penedès. Like all high-quality sparkling wines, it is produced by bottle fermentation like champagne. In Spanish, "cava" means cellar, obviously because the months of ageing take place in underground cellars. Only certain recognised white grape varieties are permitted for bottle fermentation. The usual varieties are Xarel-lo, Macabeo and Paellada, each of which characterises the aroma of the sparkling wine: Macabeo gives the cava a mild apple flavour, while Paellada gives it its characteristic golden yellow colour. Xarel-lo contributes body and alcohol content. The cava is left to ferment on the lees for at least nine months and may only be marketed one year after the grape harvest at the earliest. Brut Nature is produced with less than 3 g/litre. Despite its low sweetness, it is considered aromatic and floral.

Very rare vintage Champagner Luis Roederer. The House’s most famous wine was created in 1876 to satisfy the demanding tastes of Tsar Alexander II. The emperor asked Louis Roederer to reserve the House’s best cuvée for him every year. Produced uniquely during the best years, when the Chardonnay (around 40%) and Pinot noir (around 60%) grapes have attained perfect maturity, Cristal is aged for 6 years in Louis Roederer’s cellars and left for a further 8 months after dégorgement.
