Since 1919, the sparkling wine may only be called champagne if it is produced in Champagne. Everything else is called crémant in France, sparkling wine in Italy, cava in Spain and sparkling wine in Germany. The important thing is always: bottle fermentation! ...
First of all, every sparkling wine is a still wine. The second fermentation in the bottle produces carbonic acid. The longer this second phase of bottle fermentation lasts, in which the fine yeast plays an important role, the more complex and elegant the final sparkling wine becomes.
Only at the end of maturity does the disgorging take place. The crown cap is replaced by the cork and the yeast residues are removed from the bottle.

Cava is a traditional method Spanish sparkling wine produced mainly in the Penedès region of Catalonia. It is made the same way that Champagne is produced, but with different grapes. It is most often made using a blend of Macabeo, Parellada and Xarel.lo grapes, with a good balance of aromatic with rich floral aromas and pear/melon-like notes and high acidity.

Champagne Salon is one of the rarest and best champagnes. Even wine dealers are only rarely allocated bottles and when they do, then in very small quantities. A Salon is only produced in the best vintages - in the almost 125 years since the house existed, there have only been around 40 vintages of Salon.
If the quality of a year is not good enough for a Salon, the grapes are used for the neighboring Champagne Delamotte, which has long been part of Salon and also stands for outstanding quality (and only costs a fraction).
Pure Chardonnay from the Grand Cru single vineyard Le Jardin de Salin in Le Mesnil-sur-Oger is used for Salon. The wines are stored in the domaine's cellar for around ten to fifteen years before being sold. The base wines for the cuvée ferment and mature exclusively in steel tanks. Champagne Salon is known to age very well.
