Since 1919, the sparkling wine may only be called champagne if it is produced in Champagne. Everything else is called crémant in France, sparkling wine in Italy, cava in Spain and sparkling wine in Germany. The important thing is always: bottle fermentation! ...
First of all, every sparkling wine is a still wine. The second fermentation in the bottle produces carbonic acid. The longer this second phase of bottle fermentation lasts, in which the fine yeast plays an important role, the more complex and elegant the final sparkling wine becomes.
Only at the end of maturity does the disgorging take place. The crown cap is replaced by the cork and the yeast residues are removed from the bottle.

The vine oof Lambrusco Grasparossa grows on the dry soils of the Modenese uplands and lower hillslopes. Due to its lack of vigour, the Lambrusco Grasparossa vine is best cultivated in smaller vineyards, where it does well, even on rather poor soils, such as those on the lower slopes of the Modenese hills. The wine is deep ruby in colour, with a violet sheen and a light froth with an edge of the same hue. Its keen, armonious flavour has delicious body, is well balanced in acidity and and slightly fruity, leaving a pleasant, somewhat bitter aftertaste.

The Domaine des Masques is located 550 m above sea level on the Cengle plateau, protected by the Sainte-Victoire mountain range with an overwhelming panoramic view over the whole valley, completely secluded from the rest of the world. The name comes from the Provençal word for witch, because numerous medicinal plants thrive on the high plateau, which were used generations ago by herbalists and by so-called 'witches', Provençal 'Masco'. Today, this precious domain is managed by Carl and Sophie Mestdagh while preserving Provençal culture and tradition. They work together with the renowned oenologist Yves Cuilleron from Burgundy, who shapes the style of the wines. Of the 195 hectares, only 20 hectares are vineyards and the rest are olive groves, lavender fields and garrigue. A lot of free space for nature and no use of pesticides, herbicides and artificial fertilizers is the philosophy of the owners.
