Chardonnay
The wines are relatively full-bodied and strong in alcohol and harmonize very well with an aging in oak barrels. The best and most durable Chardonnay in Burgundy have buttery, nutty aromas. They are steely mineral in Chablis. The best champagnes are also varietal Chardonnay.
Chardonnay needs deep, calcareous soils in prime locations. In French Burgundy, the best vineyards are in Montrachet, Meursault and Corton-Charlemagne.
Typical flavors are melon, exotic fruits, ripe gooseberries. Due to the aging in wooden barrels, nuances of honey and nut are added.

Very vinous crémant that slowly unfolds and then becomes more and more fascinating. The Cremant is created naturally in traditional bottle fermentation.
Louis Chavy's winery is part of the Compagnie des Vins d'Autrefois, i.e. the wines of yesteryear, the classic wines from Burgundy. The company includes many small but long-established wineries.
Louis Chavy comes from Puligny-Montrachet, one of the best white wine regions in Burgundy.
The Crémant was selected by the Confrérie Chevaliers du Tastevin and was thus ennobled as one of the best wines of its kind. The Chevaliers du Tastevin from Burgundy are probably the most famous wine brotherhood in the world. It was founded in 1934 by Burgundian patriots to save their homeland from the then threatening economic decline or ruin by promoting wines.

Christian Collovray and Jean-Luc Terrier have their roots in Burgundy and produce excellent white wines in Maconnais. Floral and a little white pepper characterize the mineral white wine from the Mâcon La Roche Vineuse appellation.
Named after the town of Mâcon on the Sâone River, the area with around 5,400 hectares of vineyards is part of the Burgundy region. The Roman poet Ausonius (310-395) already mentioned the wines from this area. In the 11th and 12th centuries, the Cistercians planted vines here on a large scale. The area became famous in 1660 when the winemaker Claude Brosse delivered wine to Versailles and was noticed by the French “Sun King” Louis XIV (1638-1715) at a trade fair there because of its size. The king spoke to him, tasted his wine after mass and was so enthusiastic that the royal court was regularly supplied with it. The area stretches along the Sâone in a 15 kilometer long strip. There is also a place called Chardonnay here, suggesting that the grape variety may have originated in this area. The Mâconnais is best known for its juicy white wines made from Chardonnay with portions of Aligoté and Pinot Blanc, two-thirds of which cover the vineyards. The red wines are made from the Gamay and Pinot Noir grape varieties.

The Domain Chatelain is family-owned for the 12th generation and stands for traditional white wines from Chablis and Pouilly Fumé. The Chablis wine region is the northernmost wine region in the Burgundy region. The name was particularly well known in the 1970s and 1980s and was considered a synonym for a dry white wine at that time. Chablis is almost equidistant from Champagne, from Sancerre on the Loire and from the nearest Burgundy locations on the Côte d’Or. The cool wine-growing climate gives Chardonnay a pronounced acidity, which the winemaker usually leaves in favor of the fruitiness of the wine. The wines are therefore usually aged in stainless steel tanks and do not undergo malolactic fermentation. The steely acidity, which is largely determined by the comparatively high proportion of malic acid, is one of the trademarks of Chablis and gives the white wine a remarkable longevity.

Wines made from the Savagnin variety in the traditional bottle (0.62 l) are reminiscent of aged sherry. Its striking acidity, which gives the wine freshness, is unique. Vin Jaune is expanded by oxidation. The must matures in barrique barrels for 6 years and 3 months and is extremely durable.

2012 is one of the best vintages in Champagne. The weather conditions were ideal for picking very healthy grapes. Complex aromas of chocolate and tobacco, candied citrus fruits, lots of elegance with beautiful freshness are the reward. The vintage champagne from Devaux belongs to the house's selection "D". This is the winery's premium champagne. The assemblage consists of Pinot Noir 50% from the Côte des Bar and Chardonnay 50% from Côte des Blancs.

The 2012 vintage champagne is a finely balanced blend of 50% Chardonnay and 50% Pinot Noir. Laurent-Perrier is very restrictive when it comes to producing vintage champagnes. The conditions in 2012 were very good - frost in spring and hail in June reduced the yield, the dry, sunny summer allowed the grapes to ripen perfectly.
The champagne house Laurent-Perrier is one of the select wineries whose sparkling wines you should have tried. Even the basic champagne - La Cuvée - is incredibly fine and fresh. This purity and elegance are typical of Laurent-Perrier and thus do not necessarily have a particularly long life after disgorging. The champagne matures on the yeast for 4 years.

The course of 2014 allowed for a well-structured, dense champagne style. A mild winter, a sunny spring, then a rainy summer, followed by a sunny, dry autumn in 2014. Delamotte's vintage champagne is aged for 6 years in the bottle.
Champagne Delamotte is one of the oldest champagne houses. It was founded in 1760 and has 5 hectares in Le Mesnil-sur-Oder in the Chardonnay area of the Côte de Blancs. Today, Delamotte is linked to its neighbor, the legendary Champagne Salon, and benefits from the know-how of the house.
Delamotte is a soft, elegant champagne, fragrant, ripe.

Burgundy wine (French: Bourgogne) is wine made in the Burgundy region in eastern France. The most famous wines produced here - those commonly referred to as Burgundies - are red wines made from Pinot Noir grapes or white wines made from Chardonnay grapes. The Côte de Beaune area is the southern part of the Côte d'Or, the limestone ridge that is home to the great names of Burgundy wine. The Côte de Beaune starts between Nuits-Saint-Georges and Beaune, and extends southwards for about 25km to the River Dheune.

The champagne house Laurent-Perrier was one of the first to embark on the path to a completely dry champagne with the ultra brut in 1981, which does not require dosage. The varietal Blanc de blancs from Laurent-Perrier is now a brut nature - lively and mineral with a fine creaminess due to long aging on the yeast.

Meursault is one of the finest white wine appellations in Burgundy, Jaboulet-Vercherre is one of the top winemakers in the region. Bourgogne, or Burgundy in German, is one of the most important wine-growing regions in the world. Especially for the highest quality wines. In Meursault, the Cistercians received their first vineyard as a gift from the Duke of Burgundy on Christmas Day in 1098, the year they were founded. In Meursault, the “Paulée de Meursault” takes place every year on the third day of the “Trois Glorieuses” (three glorious days), which goes back to the tradition of a shared meal after the grape harvest. A common saying in the community is: “Only those who drink Meursault never become drunks”.
