The organoleptic characteristics of coffee in the cup depend on the raw coffee from which it is extracted, starting with the red berry that is harvested. There are different characteristics depending on the altitude where it was grown, also due to the climate and soil. The roasting process is also important: there is an industrial roasting process, which is more convenient and economical, and separate roasting, which is now rare because it requires a longer and more complex process, but with surprising results. Because by roasting each type of coffee individually at times and temperatures designed exactly for it, the intrinsic characteristics of each bean are preserved and its aromas are enhanced. Only then are the coffees blended according to the Cagliari family recipes. In this way, each bean will be able to express its tastes and aromas to the fullest, and only then will the final blend have a homogeneous colour.
The Cagliari company is also committed to continuous improvement. In 2019, they achieved organic certification of the entire supply chain according to European standards. Also in 2019 came Halal and Kosher certification. And in 2021 the BRC and IFS certifications.

The Gran Rossa is composed of the best coffee beans with 60% Arabica from South America and 40% fine Robusta, which are roasted in small batches in the drum. Intense with a balanced and persistent taste with notes of chocolate, dried fruit and freshly baked biscuits, without being too dark roasted. This keeps the coffee pleasantly smooth.
