Pinot Noir
The wines from Pinot Noir are characteristically supple elegant, often light and have a fruity, very typical bouquet of cherries, blackberries, strawberries, accompanied by hints of tobacco, almonds and violets.
The grape variety, like all Pinot varieties, changes very easily and exists in a variety of varieties and clones. Although Pinot Noir in German-speaking countries and Pino Nero in Italy are synonyms of Pinot Noir, they have their own characteristics.
The finest red wines from Pinot Noir come from the Côte des Nuits in Burgundy. Also excellent are Pinot Nero from the northern Italian South Tyrol, German Pinot Noir and Californian Pinot Noir. High-quality Pinot Noir are very durable.
The grapes have a thin skin and are therefore very sensitive to cold and susceptible to disease.

The house of Kessler is one of the few sparkling wine producers in Germany that has its historical roots in the Champagne region. With the expertise he gathered as a director and associate of Veuve Cliquot-Ponsardin, Georg Christian von Kessler founded Germany’s oldest sparkling wine producer on the 1st July 1826. The House of Kessler has always stuck to traditional methods, and used the same bottle fermentation technique. All the top sparkling wines are made according to the méthode traditionelle that the company founder, Georg Christian von Kessler, brought from the Champagne region to Germany exactly 190 years ago. Some of the production is still stored in medieval maturation cellars, where they are shaken by hand.

The hilltops of Sancerre vineyards spread through 14 villages. The two grape varieties in Sancerre are the Sauvignon Blanc and the Pinot Noir. They have gained the AOC status in 1936. The red and rosé wines, made from the noble Pinot Noir, followed in 1959 when they were awarded the AOC accreditation.
The red wines illustrate the virtues of Pinot Noir. They offer a bouquets of cherry and morellos.
In the 12th century, cultivation of vines was given added impetus through the combined efforts of the Augustine monks in St-Satur and the ruling counts of Sancerre. At that time Sancerre was famous for its red wine, produced predominantly from the Pinot Noir grape, and exported from the region along the Loire. This wine is often mentioned in accounts of life at the royal court. The famous wine of Sancerre was, in the opinion of Duke Jean de Berry, indeed the finest wine to be found in the entire kingdom.

Mercurey is the most important municipal appellation of the Côte Chalonnaise in the south of Beaune. The classic Pinot Noir is a bit more rustic than the Burgundies that grow further north, but it is also fuller and stronger, which benefits its longevity.
The Louis Chavy wine company was founded 60 years ago by Louis Chavy, an owner-grower in Puligny-Montrachet and at the ‘Domaine de la Vierge Romaine ‘ in Chassey-le-Camp. Louis Chavy was born, in Puligny Montrachet in 1919, into a family who had worked the Puligny Montrachet vineyards in the Côte de Beaune for several centuries.
After studying œnology in Dijon, Louis Chavy founded his négociant business and started producing a wide range of Côte de Beaune wines, which he soon expanded to include wines from all parts of Burgundy.

Pernand Vergelesses is typical Burgundy - and typically complicated. On the one hand, it refers to the village appellation in Burgundy's Côte de Beaune region. Added to the village name Pernand is the designation for the best vineyard "Les Vergelesses" with 18 hectares of vineyards. However, part of it also belongs to the neighbouring municipality of Savigny-lès-Beaune. In addition, the municipality of Pernand also has a share of 17 hectares in the famous Corton vineyard and thus has wines with the Corton Grand Cru designation. The Volnay appellation, named after the place of the same name, with 226 hectares of vineyards is located in the Côte de Beaune area on the Burgundian Côte d'Or between the municipalities of Pommard and Meursault. Red wines are produced almost exclusively from Pinot Noir with proportions of Pinot Gris and Pinot Liébault, which are among the best in Burgundy. The Cistercians already owned vineyards here in the 14th century and were very popular with the Dukes of Burgundy, who had a castle here at the time. Claude Arnoux (1695-1770) begins his famous book on Burgundy wines with a Latin hymn of praise for the wines of Volnay, in which he describes them as "partridge coloured" and the best wines of the Côte de Beaune. In the 17th and 18th centuries, the wine from this commune was one of the favorites of the Bourbons and the aristocracy as a whole.

Vintage champagne is the noblest form of sparkling wine. The extra brut is matured for 5 years on fine yeast in the bottle. The grapes come exclusively from 1er Cru and Grand Cru sites. In Montagne de Reims (Bouzy, Ludes, Taissy) grow the 70% Pinot Noir, which give the champagne its fruit and freshness, and in Vallée de la Marne (Mareuil-sur-Aÿ) the 30% Chardonnay, which contribute acidity and minerality. Wine Enthusiast awarded 91 points for the very successful 2013 vintage.

Champagne Bollinger is a legend - one of the last great privately owned champagne houses. The vineyards with 170 hectares are almost entirely 1er and Grand Cru sites. Bollinger's Spécial Cuvée contains up to 10% share of vin de réserve, which is put aside in the best years and matures for 5-15 years in magnum bottles under light fermentation. Perfect!
Madame Bollinger's bon mot should not be missed here: "I drink champagne when I am happy and when I am sad. Sometimes I drink it when I am alone; and when I have company, it cannot be missed. When I'm not hungry, I use it to work up an appetite, and when I'm hungry, I enjoy it. But otherwise I don't touch it, except when I'm thirsty."

The old memoirs of Nuits-Saint-Georges attest that the Moillard family already owned vineyards before the French Revolution. But the House really took off in 1850, when Symphorien Moillard bought his first wines to satisfy an order that was too large for his estate, thus initiating his trading activity. Since then, Moillard has carried out meticulous vinification and maturation work to bring all his wines to their full potential. The town of Nuits-Saint-Georges is the second most important wine town in Burgundy after Beaune. Similar to the Hospices de Beaune, they also have an annual charity auction in March called the Hospices de Nuits. The administrative headquarters of the famous Confrérie des Chevaliers du Tastevin wine brotherhood is also located here.

Be that as it may - in any case, the red wines are among the interesting growths of Bourgogne.
