Nebbiolo

Nebbiolo occurs only in northern Italian Piedmont and is pressed there varietal to Barolo, Barbaresco and some specialties such as Gattinara, Ghemme etc.
A striking feature of the Nebbiolo grape are its fine tannins (tannins), which characterize the taste of the wine pressed from it. The characteristic of the wines from Nebbiolo is the fine bouquet: rose, violet, tar, liquorice, truffle. The wines are very long-lived.
Originally, the wines from the grape variety were also called Nebbiolo. Today, Nebbiolo is the more accessible wine than a Barolo or Barbaresco, often with beautiful, fine elegance.
Nebbiolo (or in old spelling sometimes Nebiolo) is very old and is one of the noblest grape varieties in Italy. Presumably, Pliny the Elder already knew an ancestor of her in antiquity.
The special position of Nebbiolo is evidenced by a statute of the municipality of La Morra from 1431. In it, everyone is threatened with a high fine and, in case of recurrence, the loss of the right hand, which cuts off only a single Nebbiolo grape from the vineyard.

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

The average age of the vines is 50 years and they are grown on a southern exposure in calcareous clay soils, at a density of about 5,000 plants per hectare. After harvesting, the grapes are pressed and the must is fermented in temperature-controlled steel tanks after a short period in contact with dry ice to increase complexity and aroma. Skin maceration takes place over 15 days, assuring good color and body. The wine spends 36 months in oak Slavonia casks, and then six months in bottles before shipping. It is presented to the consumer with the following organoleptic characteristics: Color: garnet red with orange tinges. Professor Domizio Cavazza, a noted enologist, introduced new vinification techniques and, in 1894, founded a cooperative winery exclusively dedicated to the production of Barbaresco. Barbaresco is 100% made with the Nebbiolo grape. The dry red wine is produced in the Piedmont region in an area of the Langhe immediately to the east of Alba and specifically in the comunes of Barbaresco, Treiso and Neive plus that area of the frazione San Rocco. The soils of Barbaresco zone are composed primarily of calcareous marl dating from the Tortonian epoch.

The history of Paitin begins in 1796 when Benedetto Elia purchased a farmstead and wine cellar in Nieve, Barbaresco. In 1893, the classic Sori' Paitin Barbaresco is first produced. The wines of Paitin are benchmarks for quality in Barbaresco, standards which other producers measure themselves by. The greatest Barbaresco cru is actually in Neive; that is the famed Santo Stefano di Neive by Bruno Giacosa located within the Albesani cru. The other famed cru of Neive is Serraboella, the jewel of which is the Sori Paitin cru. Neive Barbareschi are typically more powerful than those of the other villages of Barbaesco, they are most “Barolo-like”.

The classical dry red wine comes from the Barbaresco DOC in Northern Italy, the important wine region of Piedmont. Barbaresco is 100% made with the Nebbiolo grape. The dry red wine is produced in the Piedmont region in an area of the Langhe immediately to the east of Alba and specifically in the comunes of Barbaresco, Treiso and Neive plus that area of the frazione San Rocco. The soils of Barbaresco zone are composed primarily of calcareous marl dating from the Tortonian epoch. Typical for the Barbaresco zone is the high number of little wineries (as much wine producer as acres: 500). In the begining of the sixties were founded the cooperative of producers of Barbaresco: i produttori del barbaresco.
