Nebbiolo
A striking feature of the Nebbiolo grape are its fine tannins (tannins), which characterize the taste of the wine pressed from it. The characteristic of the wines from Nebbiolo is the fine bouquet: rose, violet, tar, liquorice, truffle. The wines are very long-lived.
Originally, the wines from the grape variety were also called Nebbiolo. Today, Nebbiolo is the more accessible wine than a Barolo or Barbaresco, often with beautiful, fine elegance.
Nebbiolo (or in old spelling sometimes Nebiolo) is very old and is one of the noblest grape varieties in Italy. Presumably, Pliny the Elder already knew an ancestor of her in antiquity.
The special position of Nebbiolo is evidenced by a statute of the municipality of La Morra from 1431. In it, everyone is threatened with a high fine and, in case of recurrence, the loss of the right hand, which cuts off only a single Nebbiolo grape from the vineyard.

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. The Nebbiolo grapes for this wine come from vineyards located in Barolo villages, at 200 to 300 ft. above sea level. The average age of the vines is 50 years and they are grown on a southern exposure in calcareous clay soils, at a density of about 5,000 plants per hectare. After harvesting, the grapes are pressed and the must is fermented in temperature-controlled steel tanks after a short period in contact with dry ice to increase complexity and aroma. Skin maceration takes place over 15 days, assuring good color and body. The wine spends 36 months in oak Slavonia casks, and then six months in bottles before shipping. It is presented to the consumer with the following organoleptic characteristics: Color: garnet red with orange tinges. Fragrance: full, ethereal, lasting with the fragrance of flowers and fruits amalgamated with the scent of spices and essences. Taste: dry, intense, robust but velvety and harmonic. Torraccia del Piantavigna has vineyards in both Ghemme and Gattinara, the two D.O.C.G. areas within the D.O.C. areas of the Colline Novaresi and Vercelli in Northern Piemonte. D.O.C.G. means ‘Denominazione di Origine Controllata e Garantita’ and applies to only the 73 most tightly regulated areas of Italy where strict maximum yields, best practices and rigid quality-control are applied. The Lombardy region lies in North-Central Italy, between Piedmont to the west and Veneto to the east. It is not known, at least worldwide, for winemaking. But that doesn’t mean it lacks tradition or quality – in fact, production dates back to early Greek settlements on the Po River. And more recently, Franciacorta has become Italy’s finest producer of sparkling wine. The main red grape here is Nebbiolo. The very same noble variety of the Piedmont, of King Barolo and Queen Barbaresco. How it came to be in these far reaches is unclear, but it thrives just the same, albeit differently. The zone includes the two municipalities of Briona and Fara Novarese in the province of Novara, in Piedmont. The Nebbiolo grape forms the basis of Fara with 50-70%. The wine is blended from the Nebbiolo, Vespolina and Bonarda Novarese varieties. The Nebbiolo vine ripens very late. During fermentation, which takes place in the cold season in November and December, only insufficient yeasts were present. This meant that a relatively high residual sweetness always remained in the wine. The history of Paitin begins in 1796 when Benedetto Elia purchased a farmstead and wine cellar in Nieve, Barbaresco. In 1893, the classic Sori' Paitin Barbaresco is first produced.
