The strange name of the Wasseros vineyard plot refers to spring areas that emerge from the ground in many places. Such places were referred to as water horses in old cadastral locations as early as 1610 and gave this area in Kiedrich its name. The Pfaffenwies vineyard is adjacent to Assmannshausen. It was first mentioned in a document in 1211 after Pastor (Pfaffen) Dydo, the son of the knight Nikolaus von Scharfenstein. The location is characterized by the moist warmth of the Rhine, shallow, stony Hunsrück slate and Taunus quartzite soils on the steep slopes and deep loess in the flat part. The top quality ‘ice wine’ is made from fully ripe grapes in which the berries' ingredients are concentrated by freezing, i.e. the temperature in the vineyard must be at least -7°C when the grapes are harvested. Only the inner, very sugary and aromatic concentrate is pressed out.

Arnaud III de Pontac, a leading nobleman and the first president of the regional parliament- who insisted that the red wine from his family's estate, located in Pessac, was an unique, that didn't had sold  to négociants, who then blended it with other wines. Starting in 1660, he demanded a premium price for a wine with a name that no one beyond Bordeaux knew- "Haut- Brion", his family estate. After all, he sent his son to London five years later to open a tavern, where his wines were sold so exclusively and at quite steep prices. The vineyard of Château Haut Brion is planted to 40% Cabernet Sauvignon, 37% Merlot and 18% Cabernet Franc. The high Merlot content, compared to the Médoc First Growths, gives the wine a voluptuous edge, but does not in any way detract from its ability to age. Haut Brion was purchased by the American financier and politician Clarence Dougless Dillion in 1935. His granddaughter still owns and operates Haut-Brion to this day.
