Dry Sauternes is still rare. But the wines will appear more and more often. The cuvée of 51% Semillon and 49% Sauvignon Blanc is immensely appealing in the dry version. White fruits, floral notes, aniseed and a nice sensation of saltiness that tends to come with Sauternes. A small part was in new barriques for 6 months.

Château de Callac Prestige is a fine white Graves based on Sauvignon Blanc, Sémillon and aging in barriques. Good fruit, elegant body.
Graves in the Bordeaux region is an ancient wine-growing area. The Romans planted vineyards here as early as the 1st century. The wines from Graves established the fame of today's Bordeaux. The name Graves first appeared in the Middle Ages and is derived from the gravelly soil (terre graveleuse).
The pebbles are collected and placed next to the vines. They store the heat of the sun during the day and release the heat to the grapes late into the night. This heat promotes the ripening process in a natural way and increases the sugar content of the grapes. Another special feature are the rose bushes planted at the end of each row of vines (originally to indicate mildew infestation).

The classical dry red wine comes from the appellation Graves. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. Graves is situated on the left bank of the Garonne river, in the upstream part of the region, southeast of the city Bordeaux. The name Graves derives from ist intensely gravelly soil. The soil is the result of glaciers from the Ice Age, which also left white quartz deposits that can still be found in the soil of some of the top winemaking estates. Typical for the left bank wines (MĂ©doc) is the blend of grapes with Cabernet Sauvignon as the predominant grape. The others are Merlot, Cabernet Franc, Petit Verdot and Malbec.

Present fruit with fine tannins from the 1er Grand Cru winery Château Belair Monange. The grapes from the young vines flow into the wine, which is classified as Grand Cru Saint Emilion.
Château Belair is a 1er Grand Cru Classé and neighbor of Château Ausone. It has an extraordinary history: since the 15th century, Belair was owned by the influential Canolles family, which even survived the expropriations of the French Revolution. In the 19th century it was one of the most sought-after wineries of all. Then a change of ownership and the phylloxera disaster destroyed the winery's primacy. Of course, it always remained at the 1er Grand Cru level. In 2008 Belair was bought by the Moueix wine dynasty (Pétrus and many more).

The Bordeaux growing region extends over around two thirds of the Gironde department (no wine is grown except in the south and towards the sea) with an area of 105 by 130 kilometers and a vineyard area of 113,000 hectares. The climate, characterized by the nearby Atlantic and the many rivers, is extremely favorable for viticulture. Summer is not too dry or hot, autumn is sunny and winter is mild. The predominantly barren and stony gravel soil means that the roots of the vines have to dig up to ten meters deep into the ground to find water. This makes it easier to survive both dry periods and rainy periods (drainage promoted by gravel soil). The stony ground also serves as a heat reservoir.

The classical dry red wine comes from the appellation Saint-Estephe in Médoc. Saint-Estèphe is best known as the northernmost, and one of the four major wine growing appellations of the Médoc. The area is separated from Château Lafite-Rothschild in Pauillac to the south by the Jalle de Breuil stream and ist vineyards cover around 12 km² on the banks of the Garonne. The layers of gravel on top of clay lead to comparatively poor drainage, and the harvest is one of the latest of the whole region, although this water retention can be of use in vintages of low rainfall. Apart from the famous Grand Cru Classés there is a particularly high concentration of very good Cru Bourgeois in the Saint-Estèphe appellation, on the plateau south and west of the village.

The climate is more continental and not as maritime as in the Médoc to the west and shows greater temperature fluctuations. The vineyards are between 25 and 100 meters above sea level. The area is characterized by a variety of soil types, often even within the individual châteaux. It is roughly divided into four zones: Plateau (limestone formations with argillaceous limestone or sandy clay), Côtes (similar, but different slope and orientation), Graves (gravel and coarse gravel) and Sables (alluvial gravel).

Located in the communal appellation of Pauillac in Bordeaux, the Gaudin estate is a secret type. Family-owned since 1901, it has grown from 4 hectares to 11. The blend at Château Gaudin is made up of 5% of the now very rare grape varieties Carménère, Malbec et Petit Verdot, 10% Merlot and 85% Cabernet Sauvignon. The classical dry red wine comes from the appellation Pauillac in Médoc. The characteristic of the Pauillac terroir is its exceptional relief: the many undulating ridges make it unique morphologically speaking. Château de Callac is a classic fine Graves based on 60% Merlot, 25% Cabernet Sauvignon and 15% Cabernet Franc.

La Rose Pauillac was born in 1933 with the will of twenty growers coming together to make a great Pauillac. Pauillac is a small town that, since ancient times, sailors and winemakers has built on the edge of the estuary of the Gironde. In the 1960s, almost all small farms in Pauillac had joined this fine working tool and the wines reputation has spread beyond the local markets. Harvesting at La Rose Pauillac is selected according to each vineyards micro climate and the individual varietal down to the individual plot. Over time the small plots are meticulously maintained. An average benchmark of 10,000 feet per hectare perpetuates the old adage that the less place the vines have, less they produce, thus making the flagship wine, La Rose Pauillac, all the more concentrated and rich.
