A Barolo is made purely from the Nebbiolo grape. This vine is demanding and ripens very late. During fermentation, which takes place in the cold season of November and December, only insufficient yeasts were present. As a result, a relatively high residual sweetness always remained in the wine. It was not until the second half of the 19th century that cellar techniques were improved to such an extent that the wine could be vinified dry. Since 1860, some of the best red wines in the world have been made from Nebbiolo.

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

Nebbiolo is a red Italian wine grape variety predominantly associated with the Piedmont region where it makes the wines of Barolo, Barbaresco, Nebbiolo and Gattinara. In particularly good vintages, the Piedmontese winegrowers press the best part of the harvest as Riserva and Riserva Speciale. Barolo needs a long maturing period of up to ten years to completely lose its tannin hardness, and its colour changes from ruby to brick red. It has an extremely long shelf life. It rightly enjoys cult status; the Italians call it the king of wines and the wine of kings. The minimum storage period before the wine can be sold is three years (two of them in wooden barrels), for the Riserva five years. The minimum alcohol content is 13% vol. Charles Serres, a French oenologist originally from Bordeaux, found the perfect terroir in Haro in 1862 to produce Bordeaux-style wines, with a climate and soil that reminded him of the best terroirs of Bordeaux. Amarone della Valpolicella is an intensely flavored dry red wine made from the Veneto and Lombardia regions of north Italy. Amarone wines are made from carefully selected bunches of the best grapes. These grapes are then dried between three and four months, before fermentation. Traditionally the grapes were dried on wooden racks at ambient temperatures. the wines are matured in oak for at least two years for 'normale' Amarone and four years for Riserva. Amarone comes from the Italian word amaro bitter, compared to the sweeter wine of the region, the Recioto.

Château Meyney is one of the oldest estates in the Médoc. In 1662, it was a Convent mentioned in records under the name Prieuré des Couleys. The estate belonged to the Luetkens family for several generations, and was then acquired by Mr Désiré Cordier in 1919.
Today, the estate stretches over some of the best hilltops above the Gironde Estuary. The vineyard of 51 hectares is planted with Cabernet Sauvignon 60%, Merlot 30% et Petit Verdot 10%.
The Cru Bourgeois classification lists some of the châteaux from the Médoc that were not included in the 1855 Classification of Crus Classés, or Classed Growths. Notionally, Cru Bourgeois is a level below Cru Classé, but still of high quality. Only nine Chateaux with Cru Bourgeois status take part of the higher level Cru Bourgeois Exceptionnel.

In the heart of wine-growing Piedmont , in the hills of the Langhe is the estate vineyards of Fontanafredda, located in the villages of Serralunga d'Alba, Diano d'Alba and Barolo. 70 hectares planted with the Nebbiolo, Barbera, Dolcetto and Moscato varieties.At each vintage, grapes are consigned to Fontanafredda by nearly 400 growers in the Langhe and Roero, whose loyalty to the company have endured for generations. The viticulture is carried exclusively on hillsides with vineyards which have an average altitude between 200 and 400 metres. Mainly calcareous, the soil can differ within the space of just a few dozen metres: at times loose, with a sand content, at others firmer, with a higher proportion of silt, and above-all clay.
