Cava is a quality sparkling wine from the Spanish wine-growing region of Penedès. Like all high-quality sparkling wines, it is produced by bottle fermentation like champagne. In Spanish, "cava" means cellar, obviously because the months of ageing take place in underground cellars. Only certain recognised white grape varieties are permitted for bottle fermentation. The usual varieties are Xarel-lo, Macabeo and Paellada, each of which characterises the aroma of the sparkling wine: Macabeo gives the cava a mild apple flavour, while Paellada gives it its characteristic golden yellow colour. Xarel-lo contributes body and alcohol content. The cava is left to ferment on the lees for at least nine months and may only be marketed one year after the grape harvest at the earliest. Brut Nature is produced with less than 3 g/litre. Despite its low sweetness, it is considered aromatic and floral.

The zone includes the two municipalities of Briona and Fara Novarese in the province of Novara, in Piedmont. The Nebbiolo grape forms the basis of Fara with 50-70%. The wine is blended from the Nebbiolo, Vespolina and Bonarda Novarese varieties. The Nebbiolo vine ripens very late. During fermentation, which takes place in the cold season in November and December, only insufficient yeasts were present. This meant that a relatively high residual sweetness always remained in the wine. The Pommard appellation, named after the municipality of the same name, with 313 hectares of vineyards is located in the Côte de Beaune part of the Burgundian Côte d'Or. The strange name of the Wasseros vineyard plot refers to spring areas that emerge from the ground in many places. Such places were referred to as water horses in old cadastral locations as early as 1610 and gave this area in Kiedrich its name. Viticulture in the Layon region was developed by Dutch traders in the 16th century. The wine is made from 100 % Chenin Blanc grapes. The temperate oceanic and particularly dry climate, combined with the shallow and pebbly soils that warm up quickly, provide ideal conditions for the development of noble rot. Arnaud III de Pontac, a leading nobleman and the first president of the regional parliament- who insisted that the red wine from his family's estate, located in Pessac, was an unique, that didn't had sold  to négociants, who then blended it with other wines. Starting in 1660, he demanded a premium price for a wine with a name that no one beyond Bordeaux knew- "Haut- Brion", his family estate. After all, he sent his son to London five years later to open a tavern, where his wines were sold so exclusively and at quite steep prices. The vineyard of Château Haut Brion is planted to 40% Cabernet Sauvignon, 37% Merlot and 18% Cabernet Franc. The high Merlot content, compared to the Médoc First Growths, gives the wine a voluptuous edge, but does not in any way detract from its ability to age. Haut Brion was purchased by the American financier and politician Clarence Dougless Dillion in 1935. His granddaughter still owns and operates Haut-Brion to this day.
