The Niederhäuser Hermannshöhle vineyard is a classic southern Riesling site on the Nahe. For over 100 years, it has been the most highly taxed and accordingly rated site in the region. The soils, with a slope of about 60°, are predominantly black-grey slate interspersed with volcanic igneous rock, phorphyr and limestone. The Rieslings reach a high level of ripeness here and often develop an opulent power.

One of the typical grape varieties in Rheinhessen is the Silvaner. It is excellently suited for long ripening, especially in the form of an Eiswein-Auslese. The Gau Köngernheimer Vogelsang vineyard was mentioned in documents as early as 1744 with the name "am Vogelgesang". The family of the Counts of Ingelheim is one of the oldest in Germany. It is first mentioned in a document as early as 935 AD.
The top quality ‘Eiswein’ is made from fully ripe grapes in which the berries' ingredients are concentrated by freezing, i.e. the temperature in the vineyard must be at least -7°C when the grapes are harvested. Only the inner, very sugary and aromatic concentrate is pressed out.
