The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

The Nebbiolo grapes for this wine come from vineyards located in Barolo villages, at 200 to 300 ft. above sea level. The average age of the vines is 50 years and they are grown on a southern exposure in calcareous clay soils, at a density of about 5,000 plants per hectare. After harvesting, the grapes are pressed and the must is fermented in temperature-controlled steel tanks after a short period in contact with dry ice to increase complexity and aroma. Skin maceration takes place over 15 days, assuring good color and body. The wine spends 36 months in oak Slavonia casks, and then six months in bottles before shipping. It is presented to the consumer with the following organoleptic characteristics: Color: garnet red with orange tinges. Fragrance: full, ethereal, lasting with the fragrance of flowers and fruits amalgamated with the scent of spices and essences. Taste: dry, intense, robust but velvety and harmonic. The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Braida’s story is linked to that of Rocchetta Tanaro, a small town in the Monferrato area. From the beginning of 1982, Giacomo began to experiment with his innovative idea of pairing Barbera with the barrique: the vintage was exceptional; when the wine, Bricco dell’Uccellone, came out of the barrique, Californian oenologist AndrĂ© Tchelistcheff came to Italy and approved it, decreeing its success.
