The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

Fragrance: full, ethereal, lasting with the fragrance of flowers and fruits amalgamated with the scent of spices and essences. Taste: dry, intense, robust but velvety and harmonic. This wine goes well with red meat, game and matured cheese. It is advised to drink it at a temperature of 18-20C, decanting it carefully.

Braida’s story is linked to that of Rocchetta Tanaro, a small town in the Monferrato area. From the beginning of 1982, Giacomo began to experiment with his innovative idea of pairing Barbera with the barrique: the vintage was exceptional; when the wine, Bricco dell’Uccellone, came out of the barrique, Californian oenologist André Tchelistcheff came to Italy and approved it, decreeing its success. Two other Barbera wines were born in those years in the Rocchetta Tanaro cellar: Bricco della Bigotta in 1985 and Ai Suma, obtained from a late grape harvest (end of October) in 1989. The dry red wine is produced in the Piedmont region in an area of the Langhe immediately to the east of Alba and specifically in the comunes of Barbaresco, Treiso and Neive plus that area of the frazione San Rocco. The soils of Barbaresco zone are composed primarily of calcareous marl dating from the Tortonian epoch.

Domenico Clerico is one of the most well-respected legends in Barolo. Dolcetto possesses thirteen Denominations in Piedmont and, among these, Dolcetto d’Alba is the best known. Dolcetto region can be divided roughly into two wide strips: one stretching towards Barolo and the other running from Alba towards the Belbo Valley, where a particular terroir produces very fine and light Dolcettos.
