Marsannay is situated in the Côte de Nuits region between Dijon and Gevrey-Chambertin. The Fixin appellation, which received official recognition in 1936, produces both appellations Village and Premier Cru. Excellent, long-lived 1er Cru Chablis from the very good La Chablisienne winegrowing community. The 1er Cru Montmains comes mainly from the Butteaux vineyard, a small proportion from Fôret. Butteaux has more marl than limestone. This is why this Montmains is always a bit firmer and more profound, while being very mineral and chalky.

The Chablis wine-growing region is the northernmost of the wine-growing regions of the Burgundy region. Yields and density: 45 hl / ha with 10 000 plants / ha.
Terroir : located on the commune of Flagey-Echézeaux at 100 metres of the Clos de Vougeot and the Grands Echézaux at a spot
called «les Maizières Basses» at the bottom of the hill on a gentle slope. The vines are facing east at a height of 250 metres. Chalkyclayey

Way of culture : ploughing, earthing up every 3 years. Harvested by hand, use of a table to select the grapes. Integrated pest control,

Vatting process : 50% of the grapes are not de-stemmed, this part is put down in the vat, the other 50% come on top of it. Maceration
at a low temperature during one week, natural yeast, the wine is kept in vats from 5 to 6 weeks at 30°C. Treading and pumping over
made according to the result of the daily tastings.
Maturing : the wine has remained 18 months in contact with fine lees in oak casks (30% of new barrels, 30% of 1-year-old barrels,
30% of over-3-year-old barrels). Barrels benefit from a 36-month drying process, the oak comes from the Allier and the Vosges
forests. Light, slow and long toasting process in wood depth.

The Monnier family is situated in Meursault since 1720. Les Montrevenots is a Beaune Premier Cru vineyard in Burgundy. It is mostly planted with Pinot Noir, though a couple of producers make white wines from the small amount of Chardonnay on the site.

Beaujolais is the name of a little wine region in France just south of Burgundy that makes red wine with Gamay grapes. There’s mostly granite and schist (decomposed rock) to the North and clay-based soils (marl) to the South. All of the 10 Beaujolais Cru vineyards are located on the Northern side of Beaujolais.  Fleurie is “The Queen of Beaujolais.” The vineyards are planted at a higher altitude on the steep slopes at the foot of La Madone. Morey Saint Denis stands for elegant fine Pinot Noir. The small community has only 150 hectares between Gevrey Chambertin and Chambolle Musigny on the Burgundian Côte d'Or. The vineyards are excellent, Bonnes Mares and Clos de Lambray have a high reputation among wine lovers.
The Côte d'Or shares a southern portion with the Côte de Beaune and a northern portion with the Côte de Nuits. It runs along the fault of the Burgundy limestone hills and the Saône graben. The limestone of this region comes from the Middle Jurassic and the Upper Jurassic. The vineyards are located on the south-east facing slopes between 150 and 400 meters above sea level. A layer of marl lies over a subsoil of Jura limestone. Erosion is a key factor in determining the quality of the individual plots (climats). The best locations are in the upper part of the vineyard slopes on the edge of the limestone.
