The Italian region of Apulia (Puglia) with its capital Bari is located deep in the south on the Adriatic coast. The elongated region consists of the spur (the Gargano Mountains) and the heel (the Salento Peninsula) of the boot. The area is one of the oldest wine-growing regions in the world, as the Phoenicians and Greeks planted vines here 3,000 years ago. The Romans particularly valued the wine from Tarentum (port city of Taranto) and the poet Horace (65-8 BC) described this area as a place of “eternal spring”. In contrast to the other southern regions, there are hardly any mountains, but the landscape consists of plateaus and flatlands. The climate is dry and hot with little rainfall, so artificial irrigation is sometimes necessary. The soils consist primarily of limestone, clay and sandstone. Puglia has the most grape varieties in southern Italy, around 80 percent of which are red. Many of them are autochthonous - these have been particularly cared for and cultivated in recent years.

The red grape variety Dolcetto was probably cultivated in the Italian regions of Liguria and Piedmont as early as the 14th century. It was described as "Dosset" by a Count Nuvolone in the 18th century. As late as the 1960s, the wine reached prices comparable to Barolo or Barbaresco. The name Dolcetto means "little sweet one" and refers to the sweet grapes; the wine itself is a classic, dry red wine. There are numerous varieties that have developed differently locally due to soil and climate.

The red Barbera grape variety probably comes from the Italian region of Piedmont, where it is also the main grape variety and accounts for half of the vineyard area. The origin is controversial, one of the variants is that it was introduced to Piedmont by the Lombards in the 7th century. It has been known there since the 13th century and was mentioned in a document in 1799. The very productive vine produces acidic wines that are low in tannins. However, with rigorous yield restrictions and in a good location, you can get robust, powerful wines.

The Monferrato zone lays claim to being Barbera's birthplace, and records of it growing there as far back as the 13th century. But the hills around Alba and Monforte d'Alba have proved they are capable of growing some particularly fine Barbera, as are parts of the Asti province. Century-old vines still exist in many regional vineyards and allow for the production of long-aging, robust red wines with intense fruit and enhanced tannic content.

Bardolino is a small village on the East coast of Lake Garda. Goethe, the German poet, visited the area and remained enchanted by its atmosphere. Bardolino is a particularly pleasant wine that collects a lo of wine qualities like the mild climate, the exposition to the sunshine, the perfect balancing between rains and temperature, the variety of soils (sand, pebbles and clay) and the passion and ability of the producers. The grape blend is the same of Valpolicella wines: mainly Corvina, Rondinella and Moinara, but the result is a completely different wine even if Valpolicella is only few kilometers from Bardolino wine producing area. Bardolino can be called Superiore when it has an alcoholic percentage of at least 12° and is aged for at least one year. To meet the quality standards expected from a DOCG wine, Barodolino producers had to reduce the yield per hectar by introducing vine clones focusing on quality rather than on quantity. A careful selection of the best grapes is also operated in the vineyards during harvest.

The classical dry red wine comes from the Barolo DOC in Northern Italy, the most important wine region of Piedmont. Prior to the mid-19th century, Barolo was a sweet wine. The fact that the Nebbiolo grape ripens late in October meant that temperatures would be steadily dropping by harvest. By November and December, temperatures in the Piedmont region would be cold enough to halt fermentation, leaving a significant amount of residual sugar left in the wine. In the mid-19th century the French enologist Louis Oudart improve the winemaking techniques of the local producers. Using techniques focusing on improving the hygiene of the cellar, Oudart was able to ferment the Nebbiolo must completely dry, making the first modern Barolo. This new, dry red wine soon became a favorite among the nobility of Turin and the ruling House of Savoy, giving rise to the popular description of Barolo as the wine of kings, the king of wines.

Between the Camargue and the Pyrenees are the sunny wine routes, which were used by the Greeks and Romans 2,600 years ago. Today they are used by the 20,000 winemakers of the Pays d’Oc. The peculiarity of the Pays d’Oc wines is that they offer a range with a very broad sensory profile thanks to a range of 58 grape varieties. Their aromas are expressed either alone or in combination with each other (as a cuvée). The Mediterranean vineyards of the Pays d'Oc benefit from geographical and climatic conditions to which many grape varieties have been able to adapt - both international and typical varieties of the region, such as Carignan and Syrah, which have their origins in the Mediterranean.

Côtes de Bourg is an Appellation d'origine contrôlée (AOC) for Bordeaux wine situated around the small town of Bourg-sur-Gironde near Bordeaux, France. The first vineyards in the area were founded by the Romans. In the Middle Ages, Bourg was a major port for wine and the vineyards developed at the same tempo as the estuary traffic. Red Côtes de Bourg are garnet in colour and are predominantly based on the Merlot grape, blended with smaller quantities of Cabernet Sauvignon and Cabernet Franc. Some Chateaux still use Malbec as part of the blend. The vine has been established in le Bourgeais for centuries and the current varieties have been selected because of their performance in relation to the soil. The Côtes de Bourg are characterized by the diversity and richness of their soils.
Although the Côtes de Bourg is composed of mainly clay and limestone soils, their make-up is so rich that there is a veritable mosaic of sand and gravel in the area around Pugnac. Three types are predominant. Firstly, the Sienna-red Quaternary alluvium that is quite specific to the region and situated more on the heights: Merlot and Malbec are widely cultivated. Merlot and Cabernet are planted on clay and sandy gravel soils while Merlot is also grown on the widespread areas of clay and limestone.

Château de Callac is a classic fine Graves based on 60% Merlot, 25% Cabernet Sauvignon and 15% Cabernet Franc. Graves in the Bordeaux region is an ancient wine-growing area. The Romans planted vineyards here as early as the 1st century. The wines from Graves established the fame of today's Bordeaux. The name Graves first appeared in the Middle Ages and is derived from the gravelly soil (terre graveleuse).
The pebbles are collected and placed next to the vines. They store the heat of the sun during the day and release the heat to the grapes late into the night. This heat promotes the ripening process in a natural way and increases the sugar content of the grapes. Another special feature are the rose bushes planted at the end of each row of vines (originally to indicate mildew infestation).

Probably the most famous and well-known DO in Spain has a very old winemaking history. Numerous fermentation tanks carved into stone have been preserved, which testify to viticulture in ancient times. The efforts to ensure designation of origin and exquisite quality have a very long tradition. As early as 1560, winemakers decided to create a uniform brand for their barrels in order to guarantee the identity of the wines from this area. In 1635, the mayor of Logroño even banned the movement of carts through streets where wine cellars were located. This was done out of concern that vibrations caused by vehicles could spoil the grape must and thus affect the ripening process of the wines.
The first written reference to quality control and wine guarantees dates back to 1650. In 1787, the “Real Sociedad Económica de Cosecheros de Rioja” (Royal Economic Association of Rioja Winegrowers) was founded with the aim of promoting viticulture, winemaking and wine trade.

Auxerois is a white wine variety that is very similar in flavour to Pinot Blanc and is also related to this grape variety. It has a fine, fruity bouquet and is less acidic than Pinot Blanc. The grape variety is comparatively rare in France, Luxembourg and Germany. No wonder, as the blossom is susceptible to frost and trickling and the grape is susceptible to rotting due to the thin skin of the berries. However, Auxerois produces fragrant wines with a character all of their own.

Priorat is an ancient Spanish wine region that fell into oblivion with the phylloxera epidemic in the 19th century and was only rediscovered by young winemakers in the 1980s and became a cult. Typical are the cuvées of Granacha and Carinyena. Both grape varieties tolerate the mild, rather dry climate excellently and are characterised in their aroma by the dark slate soil of the Priorat.

The classical dry red wine comes from the appellation Saint-Estephe in Médoc. Saint-Estèphe is best known as the northernmost, and one of the four major wine growing appellations of the Médoc. The area is separated from Château Lafite-Rothschild in Pauillac to the south by the Jalle de Breuil stream and ist vineyards cover around 12 km² on the banks of the Garonne. The layers of gravel on top of clay lead to comparatively poor drainage, and the harvest is one of the latest of the whole region, although this water retention can be of use in vintages of low rainfall. Apart from the famous Grand Cru Classés there is a particularly high concentration of very good Cru Bourgeois in the Saint-Estèphe appellation, on the plateau south and west of the village.

Recognition of DOCG status came in 1980. The Vino Nobile di Montepulciano production zone comprises the land belonging to the municipal area of Montepulciano in the province of Siena, a particularly favourable location on the hilly ridge between Val di Chiana and Val d’Orcia. The land in this production zone is at altitudes of between 250 and 580 metres a.s.l. and the quality of the wines produced here is largely influenced by its climactic and geological features. The grapes are from 70% of Prugnolo Gentile, a type of Sangiovese, and the rest is Canaiolo, Ciliegiolo, Mammolo, other locally and traditional grapes in Siena.

The classical dry red wine comes from the appellation Graves. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. German most famous and oldest viticulture is the „Steilhange“, steep slopes along the Mosella river. No wonder that Weingut Milz can praise such a long winemaking tradition and history. Since 1520, the Milz family has been known as great winemakers in Trittenheim, a wine village in the well-known Moselschleife. Parts of the original 1680 wine cellar are today still visible. Milz’s wines are quite classic Riesling from the Mosel, since they present the ideal alcohol level, delicatesugar residue and an extremely long finish. In 1900, these wines used to be the most expensive in any European restaurant’s menu, even more high-priced than the best Burgundies and Bordeaux wines.
The Apotheke vineyard is located in front of Trittenheim on the right bank of the Mosella. This region is famous for his 40%-60% incline. Soil is rocky and made up of green-blue Devon – altered slate that during the day stores the sun heat on the west-southern slopes and at night gives it back to the vine. This phenomenon allows the growing Riesling to properly ripen. The vineyard is located at 150-200 metres above sea level and stretches across 72 hectares.
The peculiar name „Apotheke“ was not chosen because of a special healing effect of these wines, as you could guess, but it results form the alteration of the name „Abteiberg“: the hill were the old Trier Abbey was locarted. Until 1909 winemakers had to use a ferry to reach their vineyards. In the core area of the region the original docking pier still survives.

Château de Chelivette has existed since the 16th century near the communes of Ste Eulalie and St Loubes and has 29 hectares of prime hillside vineyards. Since 2014, the vineyard has been converted to organic farming and biodynamics. The wines of Bordeaux are so-called cuvées, wines blended from several grape varieties. Each château (winery) has its own recipe for blending grape varieties and vinification, which is carefully guarded. In Bordeaux, barrel ageing in small 225-litre barrels has also been used for centuries and barrique ageing has been brought to its highest perfection.

Michel Laroche produces an aromatically expressive, complex Chablis from very old vines.
The Chablis wine-growing region is the northernmost of the wine-growing regions of the Burgundy region. The name was very well known, especially in the 1970s and 1980s, and at that time was considered a synonym for a dry white wine. Chablis is almost equidistant from Champagne, from Sancerre on the Loire and from the nearest Burgundy locations on the Côte d'Or. The cool wine-growing climate gives the Chardonnay a pronounced acidity, which the winemaker usually leaves in the wine in favor of the fruitiness. The wines are therefore mostly matured in stainless steel tanks and do not go through malolactic fermentation. The steely acidity, which is strongly determined by the comparatively high proportion of malic acid, is one of the hallmarks of Chablis and gives the white wine a remarkable longevity.

The old memoirs of Nuits-Saint-Georges attest that the Moillard family already owned vineyards before the French Revolution. But the House really took off in 1850, when Symphorien Moillard bought his first wines to satisfy an order that was too large for his estate, thus initiating his trading activity. Since then, Moillard has carried out meticulous vinification and maturation work to bring all his wines to their full potential. The town of Nuits-Saint-Georges is the second most important wine town in Burgundy after Beaune. Similar to the Hospices de Beaune, they also have an annual charity auction in March called the Hospices de Nuits.
