The Italian region of Apulia (Puglia) with its capital Bari is located deep in the south on the Adriatic coast. The elongated region consists of the spur (the Gargano Mountains) and the heel (the Salento Peninsula) of the boot. The area is one of the oldest wine-growing regions in the world, as the Phoenicians and Greeks planted vines here 3,000 years ago. The Romans particularly valued the wine from Tarentum (port city of Taranto) and the poet Horace (65-8 BC) described this area as a place of “eternal spring”. In contrast to the other southern regions, there are hardly any mountains, but the landscape consists of plateaus and flatlands. The climate is dry and hot with little rainfall, so artificial irrigation is sometimes necessary. The soils consist primarily of limestone, clay and sandstone. Puglia has the most grape varieties in southern Italy, around 80 percent of which are red. Many of them are autochthonous - these have been particularly cared for and cultivated in recent years.

The Corbières wine-growing region is located on the mountain range of the same name on the edge of the Pyrenees. To the south is the Roussillon appellation. The region extends from Narbonne on the Mediterranean to Carcasson inland. Between the Camargue and the Pyrenees are the sunny wine routes, which were used by the Greeks and Romans 2,600 years ago. Today they are used by the 20,000 winemakers of the Pays d’Oc. The peculiarity of the Pays d’Oc wines is that they offer a range with a very broad sensory profile thanks to a range of 58 grape varieties. Côtes de Bourg is an Appellation d'origine contrôlée (AOC) for Bordeaux wine situated around the small town of Bourg-sur-Gironde near Bordeaux, France. The first vineyards in the area were founded by the Romans. In the Middle Ages, Bourg was a major port for wine and the vineyards developed at the same tempo as the estuary traffic. Red Côtes de Bourg are garnet in colour and are predominantly based on the Merlot grape, blended with smaller quantities of Cabernet Sauvignon and Cabernet Franc. Some Chateaux still use Malbec as part of the blend. The vine has been established in le Bourgeais for centuries and the current varieties have been selected because of their performance in relation to the soil. The Côtes de Bourg are characterized by the diversity and richness of their soils.
Although the Côtes de Bourg is composed of mainly clay and limestone soils, their make-up is so rich that there is a veritable mosaic of sand and gravel in the area around Pugnac. Three types are predominant. Firstly, the Sienna-red Quaternary alluvium that is quite specific to the region and situated more on the heights: Merlot and Malbec are widely cultivated. Merlot and Cabernet are planted on clay and sandy gravel soils while Merlot is also grown on the widespread areas of clay and limestone.

Château de Callac is a classic fine Graves based on 60% Merlot, 25% Cabernet Sauvignon and 15% Cabernet Franc. Graves in the Bordeaux region is an ancient wine-growing area. The Romans planted vineyards here as early as the 1st century. The wines from Graves established the fame of today's Bordeaux. The name Graves first appeared in the Middle Ages and is derived from the gravelly soil (terre graveleuse).
The pebbles are collected and placed next to the vines. They store the heat of the sun during the day and release the heat to the grapes late into the night. This heat promotes the ripening process in a natural way and increases the sugar content of the grapes. Another special feature are the rose bushes planted at the end of each row of vines (originally to indicate mildew infestation).

Probably the most famous and well-known DO in Spain has a very old winemaking history. Numerous fermentation tanks carved into stone have been preserved, which testify to viticulture in ancient times. The efforts to ensure designation of origin and exquisite quality have a very long tradition. As early as 1560, winemakers decided to create a uniform brand for their barrels in order to guarantee the identity of the wines from this area. In 1635, the mayor of Logroño even banned the movement of carts through streets where wine cellars were located. This was done out of concern that vibrations caused by vehicles could spoil the grape must and thus affect the ripening process of the wines.
The first written reference to quality control and wine guarantees dates back to 1650. In 1787, the “Real Sociedad Económica de Cosecheros de Rioja” (Royal Economic Association of Rioja Winegrowers) was founded with the aim of promoting viticulture, winemaking and wine trade.

The classical dry red wine comes from the appellation Saint-Estephe in Médoc. Saint-Estèphe is best known as the northernmost, and one of the four major wine growing appellations of the Médoc. The area is separated from Château Lafite-Rothschild in Pauillac to the south by the Jalle de Breuil stream and ist vineyards cover around 12 km² on the banks of the Garonne. The layers of gravel on top of clay lead to comparatively poor drainage, and the harvest is one of the latest of the whole region, although this water retention can be of use in vintages of low rainfall. Apart from the famous Grand Cru Classés there is a particularly high concentration of very good Cru Bourgeois in the Saint-Estèphe appellation, on the plateau south and west of the village.
