Cabernet Sauvignon
Cabernet Sauvignon dominates the famous Grand Cru Classé of 1855 by Lafite and Mouton Rothschild, Latour and Haut Brion and shapes their unique taste.
The aroma of blackcurrants (cassis), noticeable acidity and tannins are typical. Acidity and tannins mean that the wines should not be drunk too young and the wine should "breathe" after opening. ...
Cabernet Sauvignon finds in Bordeaux the perfect complement to the full-bodied grape variety Merlot, refined by the bouquet of Petit Verdot and the spiciness of Cabernet Frank. Tobacco and roasted notes come from maturity in oak barrels.
The small-berry, very dark grapes need a mild warm climate and ripen late. But too much heat makes the wines thick and jammy. In Bordeaux or more precisely, on the so-called "left bank" in the Médoc appellations Margaux, St.Julien, Pauillac and St.Estephe, as well as in Pessac-Legnan, the wines are finely structured, subtle and have only moderate alcohol.

Cabernet Sauvignon is a vine variety favoured in the production of great reds destined for long-term ageing. Thanks to an incredible capacity to adapt to different climates, it is the most diffuse vine in the entire world. Altavilla della Corte Cabernet Sauvignon is a label with a single varietal Cabernet Sauvignon which attests to the surprising versatility of this French vine, and, at the same time, Sicily’s natural propensity for quality viticulture. The grapes cultivated at Borgo Guarini perfectly highlight the synergy between the land and the art of winemaking, which, as ever, characterises Firriato’s wines.

The classical dry red wine comes from the appellation Saint-Estephe in Médoc.
Saint-Estèphe is best known as the northernmost, and one of the four major wine growing appellations of the Médoc. The area is separated from Château Lafite-Rothschild in Pauillac to the south by the Jalle de Breuil stream and ist vineyards cover around 12 km² on the banks of the Garonne.
The layers of gravel on top of clay lead to comparatively poor drainage, and the harvest is one of the latest of the whole region, although this water retention can be of use in vintages of low rainfall.
Apart from the famous Grand Cru Classés there is a particularly high concentration of very good Cru Bourgeois in the Saint-Estèphe appellation, on the plateau south and west of the village.

Located in the communal appellation of Pauillac in Bordeaux, the Gaudin estate is a secret type. Family-owned since 1901, it has grown from 4 hectares to 11. The blend at Château Gaudin is made up of 5% of the now very rare grape varieties Carménère, Malbec et Petit Verdot, 10% Merlot and 85% Cabernet Sauvignon. The classical dry red wine comes from the appellation Pauillac in Médoc. The characteristic of the Pauillac terroir is its exceptional relief: the many undulating ridges make it unique morphologically speaking. Highly favourable conditions facilitate the dissection of the layer of gravel. This thin, Garonne gravel from whose very poverty springs great richness, has an extremely effective natural drainage.

La Rose Pauillac was born in 1933 with the will of twenty growers coming together to make a great Pauillac. Pauillac is a small town that, since ancient times, sailors and winemakers has built on the edge of the estuary of the Gironde. In the 1960s, almost all small farms in Pauillac had joined this fine working tool and the wines reputation has spread beyond the local markets. Harvesting at La Rose Pauillac is selected according to each vineyards micro climate and the individual varietal down to the individual plot. Over time the small plots are meticulously maintained. An average benchmark of 10,000 feet per hectare perpetuates the old adage that the less place the vines have, less they produce, thus making the flagship wine, La Rose Pauillac, all the more concentrated and rich.

The classical dry red wine comes from the appellation Graves, Pessac Leognan in Médoc. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. Graves is situated on the left bank of the Garonne river, in the upstream part of the region, southeast of the city Bordeaux. The name Graves derives from ist intensely gravelly soil. The soil is the result of glaciers from the Ice Age, which also left white quartz deposits that can still be found in the soil of some of the top winemaking estates. Typical for the left bank wines (Médoc) is the blend of grapes with Cabernet Sauvignon as the predominant grape. The others are Merlot, Cabernet Franc, Petit Verdot and Malbec.

Château Grand-Puy Ducasse was classified 5th growth in the famous 1855 classification. Three large plots in the best parts of Pauillac form the Pauillac, Grand Cru Classé en 1855 vineyard of this classified growth. This unusual configuration is a direct inheritance from the estate’s founder, Pierre
Ducasse, an eminent lawyer. In the 18th century he gave a single name to a fine vineyard holding, which was put together through inheritance and purchases. When he died in 1797, his son, Pierre, inherited a 60-hectare exploitation, named Ducasse-Grand-Puy-Artigues-Arnaud, of which two
third were planted with vines. The estate was classified in 1855, under the name of Artigues Arnaud.

In 1918, South African winegrowers realized that it did not help the quality of their products if everyone worked for themselves and that there were no standards for a perfect wine with South African character. The KWV changed this and ensured structured trade, minimum prices and harvest quantities that were conducive to quality. By critics and wine lovers alike, the KWV is seen as the benchmark for South African wine. The KWV has its home in Paarl, with the famous Cathedral Cellar at its heart.

Franschhoek is located in the South African province of Western Cape. The name of the village means "French Angle" and refers to its foundation in 1688, when several hundred emigrated Huguenots from France settled in the small village. Some of them were winegrowers who quickly recognised the potential of the terroir and used it for winegrowing.
In 1694, the French Huguenot Pierre Jourdan was given a farm, which he then christened Cabriere, named after his hometown in the south of France. In 1982, the estate was bought by Achim von Arnim.
The Franschhoek Valley is surrounded by mountains on three sides and receives late morning and long evening sun. This favours slow and balanced ripening, resulting in fruit-driven flavour profiles. The above-average rainfall and cooler temperatures compared to neighbouring regions contribute to the minerality of the flavour profiles.
The top vineyards are reminiscent of Burgundy and are responsible for specialising in the Chardonnay and Pinot Noir grape varieties.
