Cabernet Sauvignon
Cabernet Sauvignon dominates the famous Grand Cru Classé of 1855 by Lafite and Mouton Rothschild, Latour and Haut Brion and shapes their unique taste.
The aroma of blackcurrants (cassis), noticeable acidity and tannins are typical. Acidity and tannins mean that the wines should not be drunk too young and the wine should "breathe" after opening. ...
Cabernet Sauvignon finds in Bordeaux the perfect complement to the full-bodied grape variety Merlot, refined by the bouquet of Petit Verdot and the spiciness of Cabernet Frank. Tobacco and roasted notes come from maturity in oak barrels.
The small-berry, very dark grapes need a mild warm climate and ripen late. But too much heat makes the wines thick and jammy. In Bordeaux or more precisely, on the so-called "left bank" in the MĂ©doc appellations Margaux, St.Julien, Pauillac and St.Estephe, as well as in Pessac-Legnan, the wines are finely structured, subtle and have only moderate alcohol.

The Château Haut-Piquat is located in the Lussac Saint-Emilion growing area and was the first winery in 1972 taken over by the Rivière family. From the elegant wine cellar, the view over the surrounding hills is remarkable: hectares of vines and forest, especially on the hill of Picampeau, where there is also an impressive megalith. Today, the winery has 22 hectares of continuous vineyards on an excellent lime soil, as well as hills with various sand-pitted red clay formations. Here the noble grape varieties - 80% Merlot, 15% Cabernet Sauvignon, 5% Cabernet Franc - can express their full potential. Sustainable cultivation has been practiced since 2001.

The Chateau Chantalouette is located in Pomerol and is run by Christian Moueix. The Lambert family has owned it since the 15th century. The vineyard area covers an impressive 47 hectares and is planted with 70% Merlot, 15% Cabernet Franc and 15% Cabernet Sauvignon. Château du Tertre is one of the oldest properties in the Medoc region of Bordeaux. Chateau Lafon Rochet in St. Estephe dates back to the middle of the 17th century. The estate was founded In 1650. While many Bordeaux vineyards were confiscated during the French Revolution, that did not happen to Lafon Rochet. The Left Bank estate remained the property of the same family for more than two centuries. In 1959 the Tesseron family purchased the estate.
The 45 hectare vineyards of Lafon Rochet consists in one single, large parcel with three soil types, limestone, marl and clay. Franschhoek is located in the South African province of Western Cape.
