Cabernet Sauvignon
Cabernet Sauvignon dominates the famous Grand Cru Classé of 1855 by Lafite and Mouton Rothschild, Latour and Haut Brion and shapes their unique taste.
The aroma of blackcurrants (cassis), noticeable acidity and tannins are typical. Acidity and tannins mean that the wines should not be drunk too young and the wine should "breathe" after opening. ...
Cabernet Sauvignon finds in Bordeaux the perfect complement to the full-bodied grape variety Merlot, refined by the bouquet of Petit Verdot and the spiciness of Cabernet Frank. Tobacco and roasted notes come from maturity in oak barrels.
The small-berry, very dark grapes need a mild warm climate and ripen late. But too much heat makes the wines thick and jammy. In Bordeaux or more precisely, on the so-called "left bank" in the Médoc appellations Margaux, St.Julien, Pauillac and St.Estephe, as well as in Pessac-Legnan, the wines are finely structured, subtle and have only moderate alcohol.

The wines of Pomerol have a high composition of Merlot in their blends are considered the most gentle and least tannic and acidic of Bordeaux wines. Fine Priorat from flagship winemaker Marco Abella with typical 55% Garnacha and 35% Carinyena, 10% Cabenet Sauvignon. Accessible with aromas of red berry fruits and spices.
Priorat is an ancient Spanish wine region that fell into oblivion with the phylloxera epidemic in the 19th century and was only rediscovered by young winemakers in the 1980s and became a cult. Typical are the cuvées of Granacha and Carinyena. Both grape varieties tolerate the mild, rather dry climate excellently and are characterised in their aroma by the dark slate soil of the Priorat.

A captivating Supertuscan that combines the four red varieties selected in the history of Banfi come the best for our vineyards in Montalcino. The mild winter and the summer characterized by excellent temperature excursions between day and night, favored the excellent ripeness and quality of the grapes. Thanks to these conditions the wines are balanced and complex. The result is an austere and intriguing wine, with distinctly fruity and spicy fragrances. The aromas of licorice and pepper are accompanied by a slight hint of leather. In the mouth it is balanced, with sweet tannins and persistent hints

Cabernet Sauvignon is a vine variety favoured in the production of great reds destined for long-term ageing. Thanks to an incredible capacity to adapt to different climates, it is the most diffuse vine in the entire world. Altavilla della Corte Cabernet Sauvignon is a label with a single varietal Cabernet Sauvignon which attests to the surprising versatility of this French vine, and, at the same time, Sicily’s natural propensity for quality viticulture. The grapes cultivated at Borgo Guarini perfectly highlight the synergy between the land and the art of winemaking, which, as ever, characterises Firriato’s wines.

The classical dry red wine comes from the appellation Graves, Pessac Leognan in Médoc. Graves (from French: gravelly land) is an important subregion of the Bordeaux wine region. Graves is situated on the left bank of the Garonne river, in the upstream part of the region, southeast of the city Bordeaux. The name Graves derives from ist intensely gravelly soil. The soil is the result of glaciers from the Ice Age, which also left white quartz deposits that can still be found in the soil of some of the top winemaking estates. Typical for the left bank wines (Médoc) is the blend of grapes with Cabernet Sauvignon as the predominant grape. The others are Merlot, Cabernet Franc, Petit Verdot and Malbec.

The classical dry red wine comes from the appellation Saint-Estephe in Médoc. Saint-Estèphe is best known as the northernmost, and one of the four major wine growing appellations of the Médoc. The area is separated from Château Lafite-Rothschild in Pauillac to the south by the Jalle de Breuil stream and ist vineyards cover around 12 km² on the banks of the Garonne. The layers of gravel on top of clay lead to comparatively poor drainage, and the harvest is one of the latest of the whole region, although this water retention can be of use in vintages of low rainfall. Apart from the famous Grand Cru Classés there is a particularly high concentration of very good Cru Bourgeois in the Saint-Estèphe appellation, on the plateau south and west of the village.

Château Meyney is one of the oldest estates in the Médoc. In 1662, it was a Convent mentioned in records under the name Prieuré des Couleys. The estate belonged to the Luetkens family for several generations, and was then acquired by Mr Désiré Cordier in 1919.
Today, the estate stretches over some of the best hilltops above the Gironde Estuary. The vineyard of 51 hectares is planted with Cabernet Sauvignon 60%, Merlot 30% et Petit Verdot 10%.
The Cru Bourgeois classification lists some of the châteaux from the Médoc that were not included in the 1855 Classification of Crus Classés, or Classed Growths. Between the Camargue and the Pyrenees are the sunny wine routes, which were used by the Greeks and Romans 2,600 years ago. Today they are used by the 20,000 winemakers of the Pays d’Oc. The peculiarity of the Pays d’Oc wines is that they offer a range with a very broad sensory profile thanks to a range of 58 grape varieties. Their aromas are expressed either alone or in combination with each other (as a cuvée). The Mediterranean vineyards of the Pays d'Oc benefit from geographical and climatic conditions to which many grape varieties have been able to adapt - both international and typical varieties of the region, such as Carignan and Syrah, which have their origins in the Mediterranean.

Located in the communal appellation of Pauillac in Bordeaux, the Gaudin estate is a secret type. Family-owned since 1901, it has grown from 4 hectares to 11. The blend at Château Gaudin is made up of 5% of the now very rare grape varieties Carménère, Malbec et Petit Verdot, 10% Merlot and 85% Cabernet Sauvignon. The classical dry red wine comes from the appellation Pauillac in Médoc. The characteristic of the Pauillac terroir is its exceptional relief: the many undulating ridges make it unique morphologically speaking. Highly favourable conditions facilitate the dissection of the layer of gravel. This thin, Garonne gravel from whose very poverty springs great richness, has an extremely effective natural drainage.

La Rose Pauillac was born in 1933 with the will of twenty growers coming together to make a great Pauillac. Pauillac is a small town that, since ancient times, sailors and winemakers has built on the edge of the estuary of the Gironde. In the 1960s, almost all small farms in Pauillac had joined this fine working tool and the wines reputation has spread beyond the local markets. Harvesting at La Rose Pauillac is selected according to each vineyards micro climate and the individual varietal down to the individual plot. Over time the small plots are meticulously maintained. An average benchmark of 10,000 feet per hectare perpetuates the old adage that the less place the vines have, less they produce, thus making the flagship wine, La Rose Pauillac, all the more concentrated and rich.

The classical dry red wine comes from the appellation Graves, Pessac Leognan in Médoc. Château La Louvière has 48 hectares (120 acres) planted to red grape varieties (64% Cabernet Sauvignon, 30% Merlot, 3% Cabernet Franc and 3% Petit Verdot), and 13.5 hectares (33 acres) planted to white grape varieties (85% Sauvignon blanc and 15% Sémillon).

In terms of landscape, soil and climate, the Umbria growing region can be compared to Tuscany. Umbria is one of the few regions that does not border a sea. Viticulture existed here on both sides of the River Tiber before the Romans, during the time of the Etruscans and the Umbrians who gave it their name. Archaeological finds and wine cellars that are over 3,000 years old and laboriously dug into the volcanic rocks are historical witnesses to this.
