What does a carafe or a decanter do?
Fine aromatic compounds build up as a result of the contact with air. The phenols in the wine react with the oxygen. Of course, the resulting valuable bouquet should not linger for hours and tire the wine. It is one of the mysteries of the wine world why there are countless carafes and decanters of all shapes and sizes but none with a stopper.
