Bacchus from the Freinsheimer Rosenbühl in the Palatinate. The white wine grape variety Bacchus is a cross between Silvaner, Riesling and Müller-Thurgau. In 1933, Peter Morio and Bernhard Husfeld bred the grape variety at the Geilweilerhof Institute for Vine Breeding. Most of the light yellow wines are light to medium-bodied. Mature Bacchus wines can also be rich in extracts, fruity and have a bouquet (sometimes reminiscent of Scheurebe). Cava is a quality sparkling wine from the Spanish wine-growing region of Penedès. Like all high-quality sparkling wines, it is produced by bottle fermentation like champagne. In Spanish, "cava" means cellar, obviously because the months of ageing take place in underground cellars. Only certain recognised white grape varieties are permitted for bottle fermentation. The usual varieties are Xarel-lo, Macabeo and Paellada, each of which characterises the aroma of the sparkling wine: Macabeo gives the cava a mild apple flavour, while Paellada gives it its characteristic golden yellow colour. Xarel-lo contributes body and alcohol content. The cava is left to ferment on the lees for at least nine months and may only be marketed one year after the grape harvest at the earliest. Brut Nature is produced with less than 3 g/litre. Despite its low sweetness, it is considered aromatic and floral.

The Lombardy region lies in North-Central Italy, between Piedmont to the west and Veneto to the east. It is not known, at least worldwide, for winemaking. Grignolino d’Asti is a DOC for dry red wine in the Barolo area in the Italian region of Piedmont. The zone includes 34 municipalities in the province of Asti and the municipality of Castiglione Faletto in the province of Cuneo. The wine is made from Grignolino (90-100%) and Freisa (up to 10%). It is believed that the red Grignolino grape is identical to the Barbesino grape. The name comes from the dialect word “grignole”, which means kernels and refers to the high tannin content. The variety produces a light red wine with fine acidity and a fairly low alcohol content. Aged with strict selection in large oak barrels as a Riserva or Riserva Speciale, a Grignolino can become a very slowly maturing wine that can be stored for a very long time.

The zone includes the two municipalities of Briona and Fara Novarese in the province of Novara, in Piedmont. The Nebbiolo grape forms the basis of Fara with 50-70%. The wine is blended from the Nebbiolo, Vespolina and Bonarda Novarese varieties. The Nebbiolo vine ripens very late. During fermentation, which takes place in the cold season in November and December, only insufficient yeasts were present. This meant that a relatively high residual sweetness always remained in the wine. It was only in the second half of the 19th century that cellar techniques were improved to such an extent that the wine could be vinified dry. Wines based on Nebbiolo can only be found in Piedmont. All attempts to introduce the grape variety to other regions have failed.

The Pommard appellation, named after the municipality of the same name, with 313 hectares of vineyards is located in the Côte de Beaune part of the Burgundian Côte d'Or. It connects to the municipality of Volnay. The Cistercians owned vineyards here as early as the 12th century. The clergyman Claude Arnoux (1695-1770) described this wine in his famous book. The Rheingau vineyards in Oestrich-Winkel have humus-rich loess soils with clayey loess loam and good water storage, and is oriented to the south and south-west with a 30° slope. Pinot gris (French) is a white wine grape variety. Ruländer is the name under which the grape variety is classified in Germany, Grauer Burgunder and Grauburgunder are permissible synonyms for German wines of this variety. Although the berry skin is reddish to red and gray in color, it is assigned to the white wine varieties. It is a rather difficult grape variety in terms of viticulture. The story begins in 1807, in Paris, when the Marquis of Barolo Carlo Tancredi Falletti married Juliette Colbert de Maulévrier, a French noblewoman and the great granddaughter of the Minister of Finance Colbert by Luigi XIV . Juliette saw the great potential of the wine made in Barolo that, after a complete fermentation and a long aging in wood, would have been able to unveil all the qualities typical of the soil and of the grape variety: Nebbiolo. The strange name of the Wasseros vineyard plot refers to spring areas that emerge from the ground in many places. Such places were referred to as water horses in old cadastral locations as early as 1610 and gave this area in Kiedrich its name. Grignolino is one of the characteristic wines of Piedmont and its value is further enhanced by the limited quantity produced. The name derives from the dialect term for the seed of the grape called 'grignola' as it contains more of it than other varieties. The end of the 19th century represents one of the greatest moments of glory in the history of Grignolino: it was considered one of the main Piedmontese vines, liked and appreciated by many (even praised in 1891 by Umberto I of Savoy, on the occasion of his visit to Asti to the Exhibition and Fair of National Wines). However, it is a delicate vine with a low yield, the production of which was already decreasing in the early 1900s. In 1968, Luigi Veronelli defined this wine as 'anarchic and individualistic', to emphasise its strong personality that is not easy to tame; other praises for this surly wine were sung by Mario Soldati: 'Grignolino, of all Piedmontese wines, is certainly the most delicate. In short, it absolutely does not adapt to the brutality of consumerism'.

The Swartland lies north of Paarl in a warm, low-rainfall area. About 100 km north-east of Cape Town, on the south-eastern foothills of the Kasteelberg, lies the Allesverloren wine estate. The Portuguese grape variety Tinta Barocca produces fine spicy, long-lasting red wines here.
The history of the winery dates back to the period between 1696 and 1704, when the governor of the Cape bequeathed it to a widow named Cloete. This courageous woman was one of the first settlers to venture into the inhospitable Swartland region. The first settlers were simple people who had only the most basic farming tools and necessities to support themselves. To buy tools or visit church, they had to make a long and arduous journey by wagon over primitive roads to Stellenbosch. On their return from such a journey in 1704, the settlers found their house burnt down and the farm destroyed. Hence the sad name "All Lost", meaning "all is lost". The owners of Allesverloren harvested the first grapes as early as 1806, and since the estate passed into the hands of the Malan family 140 years ago, Allesverloren has gone from strength to strength.

Nebbiolo d'Alba can only be produced from vineyards belonging to an area around the city of Alba, i.e. only a few municipalities such as Monforte d'Alba, La Morra, Diano d'Alba and Verduno. According to the regulations, Nebbiolo d'Alba must be made from 100% Nebbiolo grapes, and, unlike Nebbiolo delle Langhe, where up to 15% red grapes may be added, the taste changes greatly depending on the producer's choices. Nebbiolo d'Alba has a minimum ageing period of 12 months from the harvest. There is also a Superiore version of Nebbiolo d'Alba, which must be aged for at least 18 months, 6 of which in wood.
